What would you include and/or want to receive? This is for a person in a paralegal program. I already bought a really nice rolling backpack. I mean, besides the obvious pen/pencils? I'm kinda stumped.

Nothing is jumping out at me for supplies except legal pads.
It's not an office supply; but, how about one of those lumbar cushions?

Is this for someone while she is in the program, or for a graduation gift? If grad, some of this may be provided at the job and she may not want or be able to use her own stuff. for graduation, I'd skip the supplies and include a gift certificate for a mani/pedi (I'm assuming the person is female).
If it's for use while in the program -
Sticky notes in various sizes and fun colors/prints, page tabs (like sticky notes but bookmark shape), pens in lots of different colors (but I'm picky as to kind/brand), fun paper clips and butterfly clips in different sizes,
possibly a nice day planner, but that's kind of hard to pick out for someone else and she may already have one, so unless you know what she'd like, then don't
labels in different sizes. I could go crazy in an office supply store!

If she uses a letter or legal size notepad, a nice leather folder to hold it. A nice holder for pens and pencils. Post its and those little post it's for flagging pages.

I meet a lot of Solicitors and Paralegals in doing Voluntary work and they all seem to use a really good quality fountain pen in their interviews.

highlighters in colors orange & pink (yellow's very common - blue/green/purple can be too hard to see through large and small sticky flags and some of the paper post-it type little flags a variety of sizes of binder clips lined 3X3 and bigger post-it notes in a variety of colors spiral-top steno notebooks a gift card to Office Max

Office supply stores are my happy place, but a person would have to know me really well to be able to gift me with something I would think is awesome. I wish I could offer some good suggestions, but without knowing the persons circumstances etc., it's hard to give advice.
Would it work in your situation to get a small gift and add in a generous gift card?

One year for Christmas, Santa Mom gave all of us kids a basket of office supplies and it has to be, hands down, one of my favorite gifts of all time. She put Forever Stamps, envelopes, pens, pencils, notepads, post its, an office style tape dispenser and extra tape rolls, a stapler, and a couple of other things that are always needed and never bought.
It was for home use though, I am not sure if that is what you are looking for?

A leather business card holder and I am also a sucker for little decorative note pads and sticky flags.

Check out the Pilot Preppy pens at GouletPens.com (I swear they don't pay me - I'm just blown away by their service). They're fountain pens that you refill from a bottle (no cartridge) for less than $5 and they write like a dream. Plus you can buy ink samples without committing to a whole bottle. Check out Noodler's Apache Sunset - it's one of my favorites.
