I menu planned on the drive back from a camporee today AND I'm still working without a stove/oven so take that into account with my menu tonight -meatball subs (DD's request) Monday - Dinty Moore stew with crunchy bread (DH's request) Tuesday - bread, 2-3 cheeses, deli ham, raw veggies, fruit (we have a variation on this every Tues - Tuesdays are busy) Wednesday- pork loin with apples and butternut squash (DD's request) Thursday - hamburgers, raw veggies, baked beans Friday - Kinights of Columbus Fish Fry

Monday: lunch out at Indian buffet, dinner crockpot ribs with cheesy broccoli
Tuesday: lunch chicken fajitas, dinner chicken with sour cream green chili sauce
Wednesday: lunch chicken fajitas (meal prepped), dinner out, usually Wednesdays we go to a local BBQ place
Thursday: lunch taco bake, dinner bacon wrapped chicken tenders and green beans
Friday: lunch taco bake, dinner pizza (skillet keto pizza for me)
Saturday: lunch everybody scrounge, dinner out usually steak or prime rib cause I’m into red meat right now
Breakfast this week is Kristie Sullivan’s Dutch baby with bacon and homemade cold brew.

I just finished meal planning for this week. We make pizza on Thursday and go out one of the weekend nights, so I plan five meals. My daughter and I are vegetarians, but I promise anyone would like these meals. My husband eats everything we eat here at home. He'll eat meat when he's out, but he doesn't mind that we don't have it here.
1) lentil sloppy Joe's and potato salad 2) amaranth patties and a green salad 3) beet burgers and a quinoa caprese salad 4) black bean tacos and Mexican rice 5) nachos with the leftovers from #4

Sunday: pot roast, mashed potates and gravy, steamed broccoli and strawberries Monday: chicken tacos- rotisseri chicken Tuesday: left over pot roast sandwhiches Wednesday: naan bread pizza Thursday- fettucini alfredo Friday- eat out Saturday on your own night
That said, we never follow what I plan but I have all items to make it

I cook 2 to 3 meals on sunday and portion them out for the week.
This week i am bbqing a steak to be sliced on salads, making a "shrimp scampi", sausage and perogies and mini egg veggie quiche muffins for breakfasts.

I have a loose plan this week but haven't assigned most of the meals to specific nights yet. - IP turkey breast - 1-2 leftover turkey meals, probably quesadillas for one - BF Italian beef - roasted chicken leg quarters - taco soup - pancake night How do you do your turkey breast in the IP. I have one thawing I the fridge because it was a good buy this week, but don’t have a clue how I’m going to cook it. I haven't done it before either! I looked up a few recipes on Pinterest and they seem to say 30 min NPR.

It's basically a tomato-based meat sauce with kale and/or other greens, served over zucchini noodles. In the realm of low-carb spaghetti but a lot more veggies.

Monday - turkey burgers protein style with homemade steak fries, and fruit salad
Tuesday * - Costco whole chicken, roasted vegetables, left over fruit salad
Wednesday - fresh baked fish, vegetable, steamed basmati rice with lemon and herbs/cauliflower rice with lemon and herbs (trial 1 of fish)
Thursday * - stir fry vegetables with zoodles and honey garlic meatballs
Friday - breakfast dinner (gf pancakes, bacon, fruit salad, eggs)
Saturday - fix your own (dh and I will be out celebrating our 17 yr anniversary)
Sunday - taco salads
* = days with evening speech for dd so I need meals I can prep and either fully cook or partially cook for easy meals

I just looked at this and I'm intrigued. Fifty minutes at 500 degrees seems like way too long for the veggies and honestly the chicken too, compared to other chicken thigh recipes I use. Have you made this before? (not trying to sound critical at all - just really curious!)

when i do my grocery shopping, i put the recipe in it's own pinterest folder so i can remember. during the week the boys are gone 3 nights late so i usually have a few quick things, like hamburger helper (the kids love it - ick.) and steakumms with fries and broccoli. then i plan something and make double for leftovers. we usually do pizza on either friday or saturday, when the friends are over. i try to make a soup during the week too.
so this week:
pan fried chicken drumsticks, steamed veggies hamburger helper lasagna korean beef (look this up - it's easy and REALLY good) taco salad

Three of them are from the Forks Over Knives meal planner subscription, so I can't really link you to them because they require a password. But I can give you a basic idea what's in them. If you sign up for the free trial of the meal planner at www.forksoverknives.com, you can gain access to the recipe box and see the full recipes (and a lot of others). Lentil-icious bowl with creamy curry sauce (FOK) - brown rice, brown lentils and peas mixed together as the base. The topping is sauteed carrots, onions and garlic with a splash of lemon juice. Season both with salt and pepper to taste. Curry sauce was 2/3 cup raw cashews, soaked, then blended with a cup of unsweetened almond milk, a heaping tablespoon of mild curry powder, a heaping tablespoon of minced raw ginger, and salt and pepper to taste. Blend in a high-speed blender until creamy. You mix half the curry sauce with the rice/lentil mixture and use the other half to drizzle on top. (We had this last night and it was delicious!) Veggie burritos (FOK) - sautee together pre-cooked diced potatoes, diced red pepper, frozen corn, onion, a can of chickpeas (drained) and some cumin, garlic and chili powder (chipotle if you like it spicy/smoky). Stir in jarred salsa and cook until well blended and heated through. Spoon into whole wheat tortillas and top with diced avocado, diced raw onion, or other toppings as desired. Fold like a burrito and enjoy! Chickpea korma (FOK) - more complex than I can type out right now, but it's basically chickpeas, chopped kale and green peas in a typical korma sauce made with cashew cream instead of real cream. Here's the basic lentil bolognese sauce I use. I doctored it up a bit with extra garlic and some crushed red pepper because we like it spicy. Serve over whole wheat spaghetti or zucchini noodles. Make your own salad is basically where I take all the veggies from the fridge and put them out, and everyone picks their own protein (meat for DH and one kid; the other kid and I will probably have beans or crispy tofu cooked in the air fryer). The kids and DH mostly eat yogurt ranch on their salad, but I like this vegan green goddess dressing and will probably make it again this week.

You all inspired me to make a plan. This is what we'll have this week, not sure what day each will be though:
burgers penne pasta with chicken & spinach (Pioneer Woman's recipe) Stromboli left overs at least one night Friday we've been ordering teriyaki or pizza lately
I did a Walmart pick up order today. I know I said before how much I like the service, but I just LOVE it!
