Sloppy Joes tonight, with leftovers for Tuesday (the recipe calls for 2 lbs of beef, so plenty for 2 nights, plus freezing some) Peachy Pork Picante over rice tomorrow with leftovers for Wednesday (pork tenderloin coated in taco seasoning and browned, then simmered in a sauce of salsa and peach preserves) Thursday, i think cheeseburgers. Friday is probably just grabbing something quick after the chiropractor. Saturday, maybe corned beef and cabbage if it isnt too warm out. Leftovers of that on Sunday.

Pork fillet in honey and mustard tonight, something vegetarian tomorrow - maybe a potato/cheese/herb layered thing - salmon on Tuesday usually, maybe a stir fry, Wednesday will be a slow cooker option because Dh is out until later than normal and I won't want to wait that long, chicken on Thursday - maybe flattened and coated in egg and breadcrumbs, then bolognese on Friday.

I typically start by seeing what fresh foods we need to use up and what meat we have in the freezer. Then I make a list for the number of days we will be home for dinner. For 6 days it looks like this:
1 chicken 2 chicken 3 beef 4 seafood 5 seafood 6 pork/turkey/etc.
That way, I have a starting point. I know I need 2 chicken entrees so I go to that section in my binder and see what sounds good. I file to the back of the section after we use a recipe so it is easier not to repeat something too often.
We have pork loin and broccolini that needs to be used so we’ll be having orange-sage pork with mushroom balsamic broccolini and roasted butternut squash. And Halibut with a salad. Beyond that I haven’t decided.

I try to always menu plan using the sale flyers as a base. I find it's less complaining from ds and dh knows what to prep if he has a chance before he I get home.
Sun - chicken fajitas - just found out ds is going out for dinner to celebrate 2 of his good friends being drafted to the OHL yesterday so... Mon- chicken fajitas because there will be tons leftover Tues - grilled sausage in a bun with Caesar salad Wed - sausage (leftovers from Tuesday) with tortellini and peppers in a marinara sauce Thurs - garlic brown sugar chicken thighs with rice and veggies. Friday - Yoyo or take out

I tend to shop the weekly sales at the local supermarket plus working around whatever I pick up at Costco. This week we have baseball games on Mon and Wed, so we’ll be gone from 4:30-8:00 both days. Makes dinner difficult. We will need something very quick and easy those nights. Maybe tamales (not made by me) one night, soup (made earlier in the day) the other. On Tues and Thurs, we leave at 6:00 for tae kwon do (the rest of the year when it’s not Little League season, we have TKD all four nights), so dinner is early but not quite so stressful. Those are the days I will actually cook. Maybe chicken fried rice one night because it’s his favorite, and burgers or chili the other. On Friday we might get pizza. Saturday (depending on baseball schedule), maybe I’ll make some kind of a roast, and then we can eat that on Sunday, too. Join us in the daily What’s for Dinner thread for more ideas and camaraderie.

I want to be like you all! I wing it every day and often that doesn't work out very well. We have lots of spaghetti and burgers. I'm going to go back through this post and make a list of everything that sounds good and try to plan for the next couple of weeks.
Doesn't help that I hate cooking and grocery shopping (I love love love Walmart pick up though).
Wish me luck!

I buy the same things generally, so my shopping is easy, and I make variations. I make beans in my instant pot and mash for on nachos or in quesadillas. I chop cucs and peppers and put in a big container in fridge. I wash lettuce. Every night and many lunches I do Greek salad or green salad. I make a big batch of lentils. I add lentils to Greek salad or green salad or mix with couscous for a marinated lentil salad I mix in different types of fish or tofu done different ways for protein. I make 1 batch of a chicken and rice or chicken and noodles dish for dh who likes chicken. I plan for a variety of soups : carrot, lentil, vegetable, red lentil and rice are the most popular ones I make stir fry Hummus and cut veg Tuna salad Quiche Those are my go tos and make up my week. If I’m looking for change I mix in tortellini or baked spaghetti. Tonight I’m making pizza with salad. My family is happy with grilled cheese and salad . I eat salad at dinner with fish or tofu or crustlwss quiche on top.
