I was going to choose a recipe from Pinterest but thought I would ask here first. What is your favorite homemade mac and cheese recipe? Thanks!

We make this for every holiday. It was my MIL's recipe. Made it for Easter dinner today. You can't really mess it up. But read through it first, she doesn't list all of the ingredients at the top, there are few in the paragraphs.
MARY’S MAC & CHEESE
1 lb. box macaroni 2 lbs. grated extra sharp New York Cheddar Cheese 3tbs. BUTTER 1-1/2 cups whole milk 3 tbs. flour Prepared yellow mustard White pepper 2-3 tsp. Butter Seasonings
Cook 1 box elbow macaroni but cook one minute less than directions call for. ( I use Barilla) After draining pasta, return pan to heat (low-med heat) and put 3 tbs. butter in pan to melt. Add flour to butter and stir until it turns very light brown. Add about ½ cup milk and 1 – 2 tsp. of yellow mustard (to taste) to butter/flour mixture and whisk constantly until mixture begins to thicken. Add about 1 more cup milk and stir until heated. Add cheese in cupful amounts (reserve ¼-1/2 cup cheese for top) and stir until all cheese is melted. Add about 1/8 – ¼ tsp white pepper.
Mix macaroni in with cheese mixture and pour in baking dish (I use a 9 x 13 pyrex baking dish). Sprinkle reserved cheese on top.
Preheat oven to 350º. Before baking melt 2-3 tsp butter in bowl in microwave. Add PLAIN bread crumbs to form crumbs. Add about 1/8 tsp. paprika, salt & pepper. Sprinkle crumb mixture over cheese. Bake about ½ hour at 350º until top browns and cheese bubbles at sides. Let sit 5-10 minutes before serving.

The chipotle bacon mac and cheese is our go to favorite. I can't always find the right cheese, mostly we use gouda and white sharp cheddar. We made a pan today, and came home with an empty pan.

I've been making Pioneer Woman's for a few years now and guests always love it. I don't see the need to bake it, though. Especially in the summer heat. However, I have been on the lookout for a new recipe that will stay creamier. I'll probably try one that calls for Velveeta next.

I like the instant pot version best. Cook the pasta, drain it, throw in a cup of cream and a variety of cheese. I often sprinkle in a dash of nutmeg. We top ours with crushed up everything bagel chips.
I think any recipe can be good depending on the cheese you use. I like some of the wine cheese (drunken goat is one brand, but I usually buy the one at Costco), Trader Joe’s Unexpected Cheddar and a either a cheese with peppadew peppers or the Trader Joe’s cheese with carmelized onions. Gruyere is always nice too.
