I need something new to bring when I go somewhere. I generally do a cookie, but i'm getting tired of it. I'm looking for something new - maybe a cookie or bar that is always a hit.
What is your go to dessert/snack?

I love making different bars -- Congo bars, Sugar cookie bars, Lemon bars, homemade brownies (not from a mix). Those have always gone over well. You can cut them up into any size and make them look pretty with some fresh raspberries.
I use my mom's recipe for congo bars, Rosie's recipe for lemon bars and brownies, and a recipe from Ashley (here at 2peas) for sugar cookie bars. I can dig any of them out if you want.

Carrot cake, it has crushed pineapple in it so it's so moist. Or pumpkin sheet cake for a larger crowd. I typically would make a cake or cookie over a square/bars but I could do whatever. I love baking.

Brownies if I'm not trying to impress anyone. If I AM trying to impress folks, I make a Nutella torte. It's just cake , with Nutella Mousse. Then I put pirouline cookie sticks around the outside and Ferrero Rocher on top. It's a little expensive because of the decorations, but relatively easy and it makes an impressive display. It tastes like a fancy European bakery cake.

Tiramisu in a trifle bowl. Quickto make. Relatively inexpensive and ALWAYS polished off. I use this recipe
3 large eggs separated 3/4 cup sugar 1 (8-oz) container mascarpone cheese (1 scant cup) 1/2 cup chilled heavy cream 2 cups very strong brewed coffee or brewed espresso cooled to room temperature 2 tablespoons sweet Marsala wine 18 savoiardi (crisp Italian ladyfingers 6 oz) 1/4 cup fine-quality bittersweet chocolate shavings (not unsweetened made with a vegetable peeler) or 2 tablespoons unsweetened cocoa powder
Beat together yolks and 1/2 cup sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. Beat in mascarpone until just combined.
Beat whites with a pinch of salt in another bowl with cleaned beaters until they just hold soft peaks. Add remaining 1/4 cup sugar a little at a time, beating, then continue to beat whites until they just hold stiff peaks.
Beat cream in another bowl with cleaned beaters until it just holds soft peaks. Fold cream into mascarpone mixture gently but thoroughly, then fold in whites.
Stir together coffee and Marsala in a shallow bowl. Dip 1 ladyfinger in coffee mixture, soaking it about 4 seconds on each side, and transfer to an 8-inch glass baking dish (2-quart capacity). Repeat with 8 more ladyfingers and arrange in bottom of dish, trimming as needed to fit snugly. Spread half of mascarpone mixture evenly over ladyfingers. Make another layer in same manner with remaining ladyfingers and mascarpone mixture. Chill tiramisu, covered, at least 6 hours.
Just before serving, sprinkle with chocolate.
notes: • The eggs in this recipe are not cooked, which may be of concern if there is a problem with salmonella in your area. • Tiramisu can be chilled up to 1 day.

Dump cake. Takes 5 minutes to put together. Always return with an empty pan.

Betty's Congo Bars1-1/2 sticks butter 1 box brown sugar 3 eggs 2-3/4 cups flour 2-1/2 teaspoons baking powder 1/2 teaspoon salt 6 ounces chocolate chips (or more) 1/2 cup chopped walnuts Melt butter, add sugar, mix, and cool slightly. Add eggs, one at a time, beating well. Add dry ingredients. Bake in greased 9 x 13 pan for 35-40 minutes at 350 degrees. Pavlova - use any fruit to decorate, a drizzle of coulis always looks yummy, or swirl chocolate through the meringue...or strawberry puree...practically foolproof - what’s not to love? 🙂

Ice cream sandwich cake. Made in a glass pan. Alternate ice cream sandwiches, hot fudge sauce and cool whip. Make two layers. Always a crowd pleaser and quite easy.

If I want something easy it's sopapilla cheesecake bars or I use Ghiradelli's brownie mix and add Oreo cookies on a play of Ina Garten's recipe. If I want to dazzle people and do something more labor intensive it's chocolate hazelnut layer cake. If I'm entertaining, I've found a crowd pleaser is cookie ice cream sandwiches. Have done both homemade and store-bought cookies with store-bought ice cream.

I was going to suggest a Pavlova as well....I made my first one a month ago, it was easy (check youtube) and OMG.....SO heavenly!!!!

I make a lemon trifle that is covered in coconut and raspberries. It is light and delicious. And not overly sweet. I also picked up a few cookbooks on bar recipes when I was in Canada. My aunt used to make some amazing bars and the recipe book I bought was the one she used.

My go-to is Pampered Chef's lemon blueberry trifle. My mom makes a great coconut layer dessert.
Graham cracker crust in a 9x13 pan.
Then mix: 1 8 oz block cream cheese, softened 1 cup powdered sugar 1 cup cool whip, thawed
Spread on the crust. Then mix: 2 small pkgs Jello instant coconut cream pudding mix 3 cups cold milk
When slightly thickened, pour into pan and spread.
Top with cool whip and toasted coconut.
So delicious and is always gone quickly at pot lucks. You can change out the pudding flavors. I've made it with a brownie crust and chocolate pudding.

I used to make rum cake, but it isn’t the hit it used to be. I now do rice krispie treats, with Oreo cookies added. I scrape off the filling from the cookies (or else it’s too greasy). But my crowd is very casual.

White Fluffy for the domestically challenged (at least that's the name I have given it)
Soda crackers Vanilla pudding (or any preferred flavor) Cool Whip (yes, I said it) 9x13 pyrex dish
Place a layer of soda crackers on the bottom of the dish, put 1/2 of the pudding and spread it evenly. Top with 1/2 of the cool whip and spread it evenly. Repeat layers. I crumble some soda crackers on top. Place in fridge overnight. Cut and serve.
The crackers soak up the moisture and become like a pseudo-phyllo pastry.

Brownies are always a hit. I used to make them from scratch until I discovered the Ghirardelli brownie mix sold at Costco. My homemade arent better than those and the price at Costco cant be beat.

I take a shortcut on the topping. I just buy a container of chocolate frosting, warm it up in the microwave, and pour it over the top.

Mel’s Kitchen Cafe has a bunch of good dessert recipes. I’ve made her Strawberry Lime cream cake and it is heavenly. She also has a homemade chocolate caramel tart that is out of this world amazing.
