I've tried Road Trippers - but they only allow a handful of waypoints before you have to upgrade to their purchased side. I'm not sure it's worth $30 a year for it. We only have one road trip planned this year, and nothing else for a number of years at this point. So spending $30 doesn't seem like a deal for one trip to me.
I know I can Pin all kinds of stops for our Big Sur drive, and I've pinned more "don't miss" "top 10" blogs than I'm sure I need. But I'd like to plot the trip out, so that I can save it and refer to it once we are on the road. I've read there is no cell coverage at all in Big Sur, so I want something I can do online then save to my phone.
Any ideas?

This is more.for.askimg questions and browsing old questions/trip reports, but might be useful. You usually get better feedback if you have specific questions (i.e. posts that are too general often just told to read the top asked questions or do a search).

You can create a custom map in Google Maps, dropping pins at each of your planned spots. Once you have done that, then you can download the map so that it is accessible when offline. Create a Custom Google Map

I also used Trip Advisor - found a terrific road trip from San Francisco to San Diego several years ago. It had some really great stops on it.

Do you have AAA? We have used their Triptik booklet in the past. I don't have CAA right now. I did sign up for an online account - and when you start the TripTik it takes you to the US AAA site. And then when you try to add stuff it asks you to log in. Which ends up being an endless cycle - so I gave up lol.
