For the Instant Pot? My hosting site dumped all my files and for some reason I didn’t put my recipe into my Paprika and I fear it is gone for good. And of course I want to make it for dinner tonight. I can’t believe I don’t have a copy of it on any of my devices! I’ve checked over on the Recipes board and it isn’t there either. So, if anyone happened to copy it, I’d be in your debt if you shared it here. I’m such a dork!

i'm not familiar with the balsamic chicken recipe for the instant pot but i have the basic cranberry chicken one for the slow cooker:
-chicken pieces -i can cranberry sauce -i bottle french dressing -i envelope onion soup mix

I love you. 😘 here it is for those that are interested: Balsamic Cranberry Chicken Thighs - 6 Smart Points Main Dish - Chicken, Poultry, Pressure cooker Prep Time: 5 min Cook Time: 30 min Servings: 6 INGREDIENTS 2 pounds chicken thighs, boneless and skinless (about 8) Salt and pepper 1 red onion chopped 1/4 cup water 1 cup cranberry sauce, whole berry (canned) 3 tablespoons balsamic vinegar 1 tablespoon Worcestershire sauce 1 tablespoon soy sauce 1/2 tablespoon garlic powder 1/2 tablespoon rosemary 1 tablespoon cornstarch DIRECTIONS Spray the pot liner with cooking spray. Set it on Saute More. While the pot is heating, season the thighs with salt and pepper. Working in two batches, brown the tops of the thighs - approximately 4-5 minutes each batch. Remove to a platter. Put the chopped onion in the pot and saute until it starts to carmelize. If there is stuck on stuff from browning the chicken, add the 1/4 cup of water and work with a spatula to scrape up the drippings and let the onions absorb the flavoring. In a small mixing bowl, and the cranberry sauce, balsamic vinegar, Worcestershire sauce, soy sauce, garlic powder and rosemary and mix well. Arrange the browned thighs in the pot on top of the onions. Pour the sauce mixture on top of thighs trying to cover all. Cook on high pressure for 15 minutes. Use quick pressure release. Remove the chicken thighs to a platter. To thicken the sauce you can either saute while stirring until it reduces by half, or you can mix 1 tablespoon of cornstarch in 2 tablespoons of water and add the slurry to the sauce. Saute until it thickens (2-3 minutes). Each thigh with 1/2 cup of gravy is one serving. Serve with rice or noodles.

I have a wild rice salad recipe with similar ingredients that is so yummy. We don’t like dark meat though. Has anyone made this with breast meat?

Yes, because I prefer white meat, but the rest of the family likes dark. Anyhow, drop the cooking time down from 15 minutes to 8-10 minutes. Everything else is the same.

I have a beautiful new canner/ cooker in my pantry that I am afraid of. You need the instant pot. It is way different than the stovetop version. And yes you can do this recipe in the oven or a Dutch over. Just watch watch the temps!

I’m not sure the timing, but you could find another chicken thigh recipe for a Dutch oven and use their time. or even easier, use a slow cooker/crock pot and cook on low for 4-6 hours. For us, all has been cooked and served with a wild rice blend (that I had started before Jen mentioned her recipe). There are no leftovers. Which is the downside of having 2 older teenage boys at home.

How important is the rosemary? Or could I cut it down? I am not a big rosemary fan. I love Rosemary, so to me it is important. If you don’t like Rosemary, just leave it out! Maybe sub thyme in, if you like thyme.
