I think it was around the first of November when this recipe was brought up. I was out of town and finally remembered to look for my recipe. This is from the 60s. It has sentimental value to me because my university served it only on special occasions. I consider it more of a dessert than a "salad."
Bing Cherry Salad 1 can (1 1/2 cups pitted bing cherries) 1 cup crushed pineapple 2 packages (3 oz) cherry jello (gelatin) 2 cups coke/cola beverage (original recipe with sugar) 1 cup chopped nuts (pecans)
Drain juice from the cherries and pineapple to give 2 cups liquid. Use water or more pineapple juice to make 2 cups if necessary.
Bring the juice to a boil and pour over the gelatin power. Stir and stir until completely dissolved.
When cool, add the cola. Stir and chill in refrigerator until partially congealed. Then add the drained cherries, pineapple and nuts.
Place in mold or bowl and refrigerate until firmly congealed.
The directions then say to pop out of the mold, put atop a lettuce leaf and pipe softened cream cheese around the edge of the mold to garnish.
