It’s sunny here but cold. I made myself walk to the library and I picked up a Mediterranean cook book. Haven’t looked at it yet.
We have calling hours for my friend’s wife this evening. Not sure what I’ll make for dinner after that. I do have salad stuff and a big bag of broccoli. We will most likely see most of our friends so we may be there a while.
I really hope I do not have to return to floor nursing. My body is so beyond that. I do like the paycheck. 3-11 is OK. 12 hours are hard. They turn into 16 a lot.

We got 3-4 inches of snow and I just shoveled our driveway. We have a snowblower but I just prefer to shovel - I get some exercise that way and dh doesn't have to come home and deal with it. I started corned beef in the crockpot last night and it's still going. So we'll have that and carrots and cabbage boiled in the water from the crockpot(but on the stovetop). And I'll make oven roasted new potatoes since no one likes the boiled potatoes. You can strain that corned beef cooking water (even after cooking the veggies) and use it to make a bean soup or split pea soup. I love split pea soup with corned beef even better than with ham, but I have to make two entire corned beefs to have some left to add to soup, because these people are total vultures about corned beef. There's only 5 of us here and I'm cooking 2 corned beefs. LOL I don't make it that often but 4 out of the 5 love it. No one will eat split pea soup or bean soup. LOL

My brother and I were going to have lunch with my late dad’s 90yo cousin, who has no other family besides his wife. He and his wife are both very reliable and still have all their faculties, but my brother hasn’t been able to reach them for the past couple of days, so we’re worried. He’s going to stop by their senior residence place later on and see if he can find out anything. That is concerning. With my dad, I know the manager would do a well check at our request. Dinner will be a teriyaki stirfry. I haven't decided whether it will be over rice or Udon noodles. It there was a family vote, 100% would say noodles, but I'm cutting the carbs and find noodles almost impossible to resist. ETA I don't know if I should confess this, but I'm 100% sure I've only tasted corned beef once and have never made it. Which means I'm 100% sure my kids have never had it.

Also I'm not sure where you ladies get your corned beef but it's pretty pricey here...often $3.99 lb for the leaner thin cut. I try to buy it at BJs Wholesale because it's at least $1 lb cheaper.

UPDATE: ALL IS WELL!! My brother happened to show up there right at lunch time to check on them, and they were waiting for him. It was a telephone problem, not an old person problem. T hank goodness. He has lost two wives already, and truthfully I was more afraid of a health issue with her than with him! Poor guy.

I only buy it in March when it’s on sale ... I buy extra to freeze so I can make it again later in the year. But it gets expensive buying four at once! I still had one in my freezer from last year, which DD thought she should take home with her to make sure it gets eaten soon. bc2ca, you are depriving your poor children! Corned beef is the food of the gods. Must also serve onions, carrots, cabbage, and potatoes (cooked in the corned beef water) with it. Them’s the rules. Then we eat it with horseradish mustard I have shipped in from Buffalo ( christine58: Weber’s) and my mom and sister’s bread & butter pickles.

Tonight will be homemade chili for me. I don't post often but I read every day. My son's work schedule has changed so he is working 2-12pm. I am trying to help my DDIL out by taking one of my grandsons to swimming lessons once a week. I also made veggie lasagna, chicken tortilla soup, and chili for her to have on those nights when she is just exhausted from teaching school and then coming home to 2 active boys. I am going to have some chili tonight, also. I love it but it is one of those meals that is best eaten alone. I get such terrible gas from all the beans.

scrapmaven, it was a neat experience. I applied at the TV station in town here; had to stand in line to sign up. On another day, a large group of people went to a hotel ballroom and took the written test, something like 100 questions of all sorts. Not everyone finished; the time was short. We waited again, and then they called in a group of people, maybe a dozen, and said we'd made it through the first part. We filled out a questionnaire, and had to come up with two or three interesting things about ourselves as a talking point for Alex. We practiced a bit with a signaling device. Then they said, we'll call when we need you. After many weeks, I got a call to come out to play. Like Peabay, I had to pay my way out there and I treated it as a vacation, as it was my first time in California. I had a friend who did a little work as a travel agent, and she booked the whole trip. She came with me to support me, and had the experience of sitting in the audience. I had to bring clothing for five days with me to the studio, and there were rules about what not to bring -- stripes of a certain width strobe on camera. All the contestants sat together in a room, and we chatted about our education and occupation. I can't remember if I went first or later. We didn't see Alex until the game began and he walked out on stage. I think I shook his hand at the end. When I got out to the stage, I had to stand on a box so my head was roughly the same level as everyone else. I remember answering a question about leg'o'mutton sleeves! Very little memory of the rest, except I know I got the final question wrong. I had it on VCR, but I looked for the tape recently and can't find it. I REALLY wish I'd journaled the experience when it was fresh!

That's very worth a California vacation. I hope you find the tape. If not, you might ping the production company.

Hi friends I picked up some ground sausage with mushrooms and spinach from the butcher shop the other day. I’ll mix that with some ground beef and mushrooms and make some spaghetti sauce. Dh has eaten two good clean meals this week so I’ll treat him to some spaghetti I’m sending hugs to everyone that needs them today

Anyone want to share a crock pot or instant pot corned beef recipe? Can’t say I’ve ever tried it either.
Tonight I had two salads delivered, taco and ranch chicken. Whichever one I don’t eat tonight, will be eaten tomorrow. I’m thinking most likely taco salad tonight, since I missed the taco Tuesday party.
Looking forward to some cooler weather here finally; sure wish it would snow!

Montannie, that is awesome! I tried out for Wheel-of-Fortune about 30 years ago. I only had to take Bart over to San Francisco to the Westin Hotel at Union Square. I took the first test in a huge ballroom with lots of other folks. 10 puzzles in a few minutes. Made it to the final round where we played a mock-game with the *Wheel*. I think there were 12 of us. They told us to let our *personalities* shine so I was very *shiney*. They ended up picking one person ~ a guy with the personality of dryer lint. We were all stunned they picked him. In a small-world coincidence, he was on the show with one of my best friends from Louisiana! So we would have been on together. She was the big winner. During introductions she said her name was Sarah Ferguson and she was married to a Prince. My only souviner from that day is a pencil that says I Tried Out For Wheel-of-Fortune!

Hi I went grocery shopping. Tonight will be green beans, a hint of spinach, and broccoli. I am cooking teriyaki chicken kebabs for dinner. Not the best but infinitely better than pizza or pasta (on my diet). The headache went away. A friend who does Leto told me to have some chicken soup which I did and I feel great now. All is good here.

I make mine in the oven, then boil the potatoes and cabbage separately. Mine is even easier. I boil the corned beef for 2-3 hours in my big soup pot, then take the corned beef out and put the veggies in. Boil for 20 minutes, slice the beef, EAT!! (Then strain the cooking liquid and use as a soup base or freeze for future use.) ETA I’m actually really surprised at how many people have never had corned beef. I thought it was very basic. It’s just beef brisket that’s been preserved by corning (salting).

My corned beef cooking method is just like lucyg's except I never thought to save the cooking liquid for soup. Sounds like a great idea! Even though we really like it, for some reason I only cook it for St. Patrick's Day. My mouth is watering now at the thought of corned beef and I'm feeling bad for those of you who've never had it. I spent the better part of the day working in the yard so I'm late getting here. Dinner was hamburger steak cooked on the grill, onion gravy, mashed potatoes and lima beans.

Hi Everyone! I have been really tired the past couple of days so I have been MIA. I started to read the thread then DH started talking to me and I never got back to it. Hugs and prayers to everyone who needs them. I make corn beef the way lucyg does, but never made split pea soup from the broth. I will be making that from now on. Tonight DS was at a friend’s house; so DH and I went out for sushi.
