Will have lots of fresh finger foods and want to add a couple of Costco's frozen appetizers that we can bake on site.

I do these little ham/cream cheese roll-ups. I usually buy the deli ham, sliced thin (1 pound for every 1 container) and Chives/Onion Cream cheese... Spread the cream cheese right on the ham, roll up and slice. They are tiny but make a ton. and usually always are gone fast. Another one that is always gone is called Grape Salad (which I think was posted here not to long ago)..the secret to keep this fresh is that the grapes are dry.. absolutely dry, serve in a casserole style dish, not a bowl. And I serve it in a Pampered Chef Dish that has a built in icepack to keep it cool. www.tasteofhome.com/recipes/creamy-grape-salad/

Our church purchases the frozen Costco rollups--they have meat and/or cheese in the roll up. They are very thick (about 2 inches wide) but --we use an electric knife and slice each one horizontally to make it more manageable for finger food.

Thanks ladies! For this event we're doing only finger foods. Expecting 150-200 people so am planning: Lg quantity assorted cheeses, with crackers - brie, pepper jack, havarti, cheddar, goat cheese - what's your fave - either already listed, or not?vegan cheeses with GF crackers in a separate area Assorted nuts and dried fruits to go with cheeses Veggie trays (I'm not fond of premade ones, these will be freshly prepped) Hummus and ranch for the veggies Grapes Large bowl chicken salad and basket heaping with sliced baguette Large bowl chickpea (mock tuna) salad with GF and reg. crackers 2 jumbo bags frozen meatballs, 300 or so, cooked in crock pots with chili sauce + grape jelly Large shrimp platter with cocktail sauce homemade baked goods Want to supplement these with some of the frozen appetizers from Costco which can be baked on site. Two of my deceased friend's grandsons (teens) will be passing platters with these. I will probably get the mini quiches and am wondering what else is good. Tried and true.

I was in the same position you are with finger foods about a month ago. We had similar foods as you described but pulled pork instead of chicken salad. We bought mini pigs in a blanket and these spinach and cheese turnovers (but very small). The absolute first thing we ran out of were pigs in a blanket. We had vegetarians to feed but those little piggies flew off the platters. People love them!
