I feel like most of the foiling we see in collections is gold. When my husband was in residency and fellowship, and we were so poor we couldn't think straight; I didn't buy scrapbook supplies for about 5 years. Did I miss the silver foil in those 5 years or is it still to come?

I am not very trendy, so don't really know what is IN or what is OUT, just what I like...
I have a Christmas line from BoBunny from a couple of years ago with silver foiling on vellum. I think it was BB who had a camping line with COPPER foiling (I love copper!)
KaiserCraft had two beautiful Christmas lines out this past season, one with gold foiling; one with silver.
Check out Hunky Dory card making collections. They have lots of silver foiling.

I bought a weird but cool Christmas stack this December from Michaels that had silver foiling. It had narwhals. There was also a pink and silver one I almost got, but changed my mind because I am not 100% sure about pink christmas, lol.

I think it's really just that certain metals are popular — and it's not specific to the scrapbook industry.
I would say that metal finishes are currently "trendy" in this order:
1. Rose gold 2. Copper 3. Gold 4. Silver

There have been silver foil lines, indeed, over the past few years. Silver foil never took off like gold foil did, however. But even American Crafts slipped silver foil in their many brand collections. Currently, the hot trends are definitely rose gold and copper, like pancakes said. I find that holographic foil is also still very well-liked, especially for either summer or Halloween lines. The most adventurous scrap brand regarding foiling colours is definitely Prima Marketing. They've done it all: blue, hot pink, silver, gold, copper, bronze, holographic, etc.

Silver isn't as popular as gold. Shimelle mentioned it once because she really likes silver, but after one line didn't sell that great with silver foil under the AC umbrella, they decided not to produce a lot with it.
ETA: It seems the holographic look (silver based) is much more popular than plain silver since that seems to be something a lot of companies are going with if they do include silver.

Didn't one of Heidi Swapp's old lines have silver embellishments - really before the foil phase. I think I bought it and never used it.

There's been some galaxy type paper pads out that have silver foiling. I got one at Hobby Lobby and one at Michaels.
