Now that fall is here, I like to make a big pot of something on the weekend ... soup, chili, goulash. Looking for some new ideas.

Work: Roast beef with dh's awesome Yorkshire pudding  Less work: Spaghetti made with local (Spolumbo's) sausage in the sauce No work: Macaroni and tomatoes ... the key is to add a bit of Worchestershire sauce to the tomatoes before you put them into the macaroni

A whole roast chicken with stuffing in the bird, mashed potatoes, scalloped corn (cream corn, egg and saltines) and green bean casserole. Can't for get a nice lemon meringue pie for dessert. Growing up my mom would give us an option for our birthdays what we wanted for dinner, we could go out or she would make something. I always asked for this.
Sorry, this is not in a pot, so probably not much help to you, but it's good!  Now I am hungry...

Pot Roast with carrots and potatos
My grandmother used to make this velveeta / egg noodle/ tomato / beef mixture - it is out of this world. I went years without making it since I refuse to buy velveeta but regular cheese does not cut it. Last week, I was having a STRESSFUl week at work and caved and bought some, so now it will on the menu this weekend.

When I feel ill or down, I love a bowl of weetabix with hot milk. It is the food I was weaned on, and has always been a comfort food. Cottage pie with cheese on top is a winter staple in our house, and homemade soup is always a good go to - tomato, Russian vegetable, butternut squash and chorizo, curried squash, carrot and cilantro....

My former MIL used to make them (with homemade noodles) but I never got her recipe before she passed. I would love to have a recipe for them  I don't use homemade noodles because the Reame's frozen are just as good and they are a time saver. I saute onions and chopped celery in a bit of butter and olive oil, once those have cooked to translucent, I add two large chicken breats (bone in) and at least four quarts of water to a boil. Once the chicken breasts are cooked, I remove them and let them cool. I add a can of chicken stock to the stock already made just for more flavor. Once the chicken is cooled, I take it off the bone and chop it up into pieces. I bring the chicken stock back to a boil, add the frozen noodles, cook as directed (depending on how much you're cooking) and then add the chopped up chicken to the noodles for the last five minutes of cooking. Season to taste with salt and pepper. It's really easy and it's even better the next day. I don't have exact measurements so depending on how many people you're feeding will depend on how much chicken to use and how many bags of noodles. Hope this helps!
