I have a love/hate relationship with potlucks... I love going to them, love having them, but HATE trying to decide on what to bring!!! Especially when you don't know what other people are bringing!!
We will be very busy this weekend and have two potlucks to go too... anyone have any simple but really good, easily transportable recipes they'd like to share?

I have one and I was requested to being pasta salad. Also, I'm going to bring guacamole (per my mother) and an Israeli couscous salad (recipe TBD).

What about Greek salad - chopped cucumbers, tomatoes, green peppers (I use red and yellow too because they're pretty), red onion, calamari olives, dried oregano (I put a lot), lemon juice or red wine vinegar, olive oil and crumbled feta cheese.
If you want you could always add cooled cooked pasta and make it Greek pasta salad.
At a pot luck, I'm always asked to bring a hummus platter. My hummus is popular.
In my food processor, I add : 1 tin drained, rinsed chick peas, 5 cloves garlic, peeled and halved, 1 handful of chopped parsley, 1 tsp cumin, liberal amounts if salt and pepper, lemon juice from half a lemon, 1 tap tahini (optional), and about ¼-½ cup olive oil. Then just blend until smooth.
I out it in a plate, I out an olive in the centre for fancy, then I put small pieces of chopped parsley, sprinkle with paprika and drizzle with olive oil.
Then I make a platter with sliced veggies for dipping, I often include pita bread triangles and pita chips as well.

I've only started eating hummus in the last year or so, didn't think about it being something I could make. I am going to try your recipe.
I usually do Baked Beans in the crockpot for potluck. But the Greek Pasta Salad sounds good for a cold dish.

I make a pasta salad with carrots, peppers, red onion, artichoke hearts, pepperoni, cheese, multi colored pasta and I use the Good Seasons dressing made with red wine vinegar.
We've also been making the Ramen salad with the ramen noodles and bagged cole slaw mix. You toast the noodles and sliced almonds in a skillet, let it cool and then mix with the cabbage and some chopped scallions. The dressing is 1/4-1/3 each (depending how much you like) sugar, red wine vinegar and veg oil along with the seasoning packet from the ramen.

plain fruit salad....no dressings. or spinach/strawberry salad..bring dressing on the side.

Caprese Pasta Salad is my new favorite to make. I use a different type of pasta every time I make it I am eating a version of that right now. In the winter I keep a basil plant on my windowsill so I can eat a little piece of summer year round.

I use to take pasta salads but there are too many. I think appreciate people appreciate a good green salad with so many low- carbers.
Some me easy ideas. Pour anything over a block of cream cheese with crackers. Macaroni and cheese. Families like seeing kraft version so kids will eat it.
Ice cream sandwiches or Popsicles if at a house

I think I'm going to do a simple fresh fruit salad for both parties and funeral potatoes for the one on the 4th.
My mom makes the best pasta salad, so I can't compete with that.
I appreciate all the responses though!!
