or a conventional oven. I reheat lots of things in my oven or toaster oven and not the microwave as the micro makes it soggy.

Cut them a little smaller, pan fry with some canned chilies, red pepper, good quality white cheddar cheese or Cotija cheese.

You all are making my mouth water! Although in all honesty I don’t think my fridge has ever seen leftover potato wedges. I love potatoes in all forms.

I usually cut them up into squares and make them into country potatoes to have with breakfast.  But seriously, who ever has “leftover” potato wedges? That’s a foreign concept in this house!

Can you turn them into home fries or some sort of breakfast hash? I don’t eat potatoes, but this is what I’d do. Cube them, refry them in a pan on med-low with a little oil, then make breakfast burritos out of it.

I’d dice them and make potato salad or add to green salad. You can also dice and add to stir fry.
I feel I’ve become Houdini with using up leftovers. My family has been impressed 😂.

i would chop them and make into some kind of hash. breakfast or otherwise. one of our new faves is veggies with sausage. put in what you like. season with what you like. sometimes you have to cook some of the things separate so as to not overcook some things.
in fact we had this for dinner last night.
we use some combination of any of these things. potato, sweet potato, hominy, black beans, corn, asparagus, broccoli, onion. whatever you like.

You broke me. Just added potato wedges to the grocery list. Not sure when I’ll next get to the grocery, but they’re on the list! Just cut up a potato, toss them with a large pinch of kosher salt and pepper, and roast them at 400 degrees for 45 minutes or so until the edges brown.
