Good morning everyone. Tonight is Pasta Ameritreciana night. I would normally serve it w/fresh french bread and salad, but we have neither until grocery day. It's so frustrating not being able to just zip down to the store for an item or 2. First world problem and we are all in the same boat.
What's on your menu?
@sunnycalimom, it's dinner thread time.
Since we discussed lemons yesterday and got a lot of yummy lemon ideas, would you be willing to post your favorite recipe that includes lemon?
Wishing all of you a peaceful and not too boring day.

Not sure....maybe veggie wontons that I was going to have last week. I have also decided to only post and read this thread and the one I started with good news from NY State. Tired of the fricking handslapping by way too many people. Someone thought they needed to post the definition of NONE when I had used it in reference to wearing gloves....done...done...done...

Dinner here tonight is steak on the grill, with baked potatoes, salad and maybe mushroom sauce if I can be bother chopping up all the mushrooms.
DH has been making a weekly menu since he has been on home office, and it has really helped with grocery shopping planning as well as trying to ensure we are eating a (reasonably) balanced diet. Yesterday, I added a column to his list - meals we haven't had for ages, and that we should consider adding to the menu plan. We are going to need to be on our game big time this week, as shops here are shut completely on Friday, Sunday and Monday due to Easter, so no chance at all to get anything we missed.

Today is dh’s birthday. He’s requested Cioppino and sour bread and a chocolate cake with cream cheese frosting. I was able to get a 4:00 pm grocery pick up today (it was the soonest I could get - a week out from when I looked) so I will have to wait for the food, drive back (15 minutes) and then decontaminate everything 😂, throw the cake in the oven, and start working on the soup! Who know what time we will actually eat.

Happy Tuesday (it is Tuesday, right)! Just had a lazy morning and am about to start sewing some masks for my sisters. Then I had to go do curbside pickup at Best Buy. Both the air filter and the water filter on the fridge decided they needed replacing. I'm happy that they had both in stock. Thinking about calling a friend and seeing if I can do a drive by visit for a few minutes with her. She has a circular drive and a bit front porch, so I'm thinking I can stay in my car and talk to her while she is on the porch, keeping at least 6' between us. scrapmaven - My only contribution to a lemon recipe would be to make my Key Lime Pie recipe, but substitute lemon juice for the lime juice. christine58 - I'm glad you are going to keep checking in here. The board is getting a bit overwhelming at times. If people aren't handslapping, they are taking over threads and making them all about themselves and/or politics. I'm cutting back on which threads I read as well. Dinner tonight will be rechauffe. DH will have the steak from last night, while I plan to have some of the spaghetti sauce I made this weekend. Thought about baking, but we still have fresh bread and pastries, so I will save the baking until those are running low.

Hello dinner friends. I got the word this morning that my cousin Susie is dying of the virus. At this point there is nothing to be done except make her comfortable as she passes. They expect it to be the next couple of days. If you could say a prayer for her brother I would appreciate it. He is her only surviving immediate family at this point and as she has a whole host of medical problems is used to being her caretaker.
Tonight's dinner will be a ham and cheese frittata.

I’m so sorry, jeremysgirlToday I made pork chops, which the rest of the family enjoys. And I found red currants in the freezer, but completely forgot to serve them as dessert. More for me, I guess. We’ve been painting the appartment, since both of us has problems with our arms (tendinitis and other fun stuff), an hour or so at the time is more than enough. And the good news of today is that the Government will start lifting restrictions starting next week. Only the youngest kids will be allowed back to school, but they anticipate that all of them will be back before summer.

We're having meatloaf, roasted Brussels sprouts, and mashed potatoes. Major comfort food.
I like to make salmon with lemon. I brush salmon filets with olive oil, put a bit of salt and pepper on them, lay a single layer of fresh dill fronds on top of the salmon, lay extremely thin strips of red onion (or shallot) on top of the dill (not a solid layer, just every 1/4" or so), then top with a solid layer ofthin slices of seeded lemon completely covering the fish. Bake until flesh is flaky. The lemon slices heat, release juice, and it trickles down through the onion and dill layers into the fish, infusing it with flavors and poaching it in the juices. You can remove all the layers to eat, but I eat the dill and onion strips with the fish.

We're having another gourmet meal: egg salad in onion buns and Campbell's tomato soup. I thought of the Peas when I pulled the carton of eggs out of the refrigerator. The date on the carton was January 26th. I know many Peas would have trashed them back on the 27th and would be horrified that I was using them. I had marked them "for recipe" back in January and was waiting for them to get old because old eggs seem to peel better. I tested the eggs before boiling and only 5 out of the 18 were floaters. I don't disregard all use by/expiration dates, just most. ETA: I'm so sorry to hear about your cousin, Susie. Prayers for her and her brother

I was able to get margarita mix, limes and rim salt in our curbside order yesterday. I had tequila already. 👍🏻 jeremysgirl I’m so sorry to hear about your cousin. scrapmaven, I'm also wanting to run by the store, but I'm staying home and will get creative with what's here. I have ground beef that needs to be cooked today, so that will figure into DH's dinner.
I walked over 3 miles today and I'm feeling better. I have to get out and exercise each day.
Here is the mural/painting DH finished last night. Hopefully is brings a smile and hope to those who see it.

Stuffed peppers using the leftover taco stuff from Sunday night. I made this lemon chicken the other night and we devoured it! The only thing I changed was to use my immersion blender to blend the sauce after I took the chicken out. If my DD sees onion chunks she freaks out and won't eat anything from the meal. A few zaps with my immersion blender and no onion chunks! lacocinadesocorro.blogspot.com/2019/07/instant-pot-buttery-lemon-chicken.html

Hi Everyone, jeremysgirl I am so sorry about your cousin Susie. Sending prayers to you and your family. tuesdaysgone Great painting. Thanks for the recipes scrapmaven , PolarGreen12 , fiddlesticks and @bdhardy . I have to figure out what to have tonight. The weather is beautiful today; so probably not soup. But I keep wanting cornbread for dinner. Maybe I can get the little dumplings to eat Either chili or Mexican food. I think I may have to pay a visit to their universe in the basement.

She ordered new meds but they take a while to work. I will have to keep hoping they will kick in quickly. I slept for only 3 hours last night. Or I should say from 7 am-10 am this morning. With luck tonight will be better.

I’m very sorry jeremysgirl.
Tonight is chicken fajitas, maybe a margarita. I nurtured a solitary lime on my lime plant in the garage over the winter.

I don't know what she's making, but it smell delicious! Ddil and Ds are on vacation this week (a trip to Myrtle Beach had to be canceled) so she's busy in the kitchen today. When I find out what it is, I'll come back and let y'all know.

jeremysgirl , ((((HUGS)))). May your cousin's passing be peaceful and I pray for healing for her brother and your family. You have lots of friends here who are w/you now. christine58 , no fair. What flavor of ice cream and do you have enough for the whole tribe? cadoodlebug , I have to share that meme w/yds, since he's a chem major. tuesdaysgone , Your dh is so talented. Thank you for letting us share his paintings. Thanks to all of you who shared recipes. Let's keep em coming. destined2bmom , key lime pie counts, cause it does. In fact, it's a funny story in my family. My sil was all set to have her evening snack, the last piece of key lime pie and a cup of green tea. She had to run upstairs for a minute. When she got back down to the kitchen she had a happy doggie(black lab) and a completely clean plate. He snarfed the entire slice in seconds. Delta Dawn , Please keep reminding yourself that the meds will work, but there's a temporary wait and any strange feelings or thoughts are not real and will go away. Maybe think "STOP" and then do some deep breathing. You will feel better. ITA, about the rest of the board. Dwelling, fretting and panicking isn't doing anything to help, but it's making the situation a lot worse for everyone. Do your part and try to do what you can to stay in good spirits. It's not easy, but it's very doable. The media frenzy is making this 100 times worse. christine58 if you want me to do a shoutout to you so that you can come directly to the thread, I'm happy to do so. cadoodlebug , I hope it's Ok that I've calling been calling @sunnycalimom to the thread. I just do it, cause I post first and it's on my mind.
Everyone, please remember that this is a positive, encouraging and supportive thread. We don't fight. Nor do we judge. Instead we just act like a big family at the dinner table, sharing our days. When one of our tribe mates is hurting then we all reach around her in a big, compassionate hug. It's what friends do.
