AKathy's "What's For Dinner?" 05/02

Dinner here tonight will be marinated lamb strips, served in pita bread. Probably salad and tzatziki with it.

Our weather has been a bit weird the past few days - cold and drizzly rain. I am still trying to get out for a walk everyday, but both yesterday and today I have had to fit it in between rain showers.

We are having chicken fried rice. It makes a huge batch. I might buy some frozen egg rolls to go with it.

DH left for the ranch this morning and I'm doing laundry and planning my weekend. I have to pick up two things, CVS and the fabric store. I have an urge to wander thru now opened Tuesday Morning, but I promised myself I'd avoid it this weekend and go next week. The shelter in place order was lifted yesterday so I'm sure it will be crazy busy out this weekend.

No dinner plans here, I have some leftover turkey and salad fixings so that will likely be dinner.

We should have just landed in Jamaica for our first vacation since 2014 and our anniversary (tomorrow) and our niece's wedding (tuesday), however, we are home, which means figuring out dinner!
My Meijer Shipt shopper brought me the wrong ground beef- I requested 96/4 and said that 90/10 would also be ok. I requested 2 one pound packages. He brought me a 4 lb package of 80/20 instead, so I made hamburger patties out of it and froze them. Dh and DS will have those tonight and I will have a turkey sausage. I am making potato salad and as much as I want to make baked beans, I know we need to eat the fresh veggies in the fridge, so we will do that.

littlemama - how disappointing for you to miss your vacation. Is your niece's wedding going ahead, even if it can't be in Jamaica?

littlemama, so disappointing about travel right now. Hard to plan anything.

Tonight will be turkey sausages and vegetables. I have a local, cool market chain here that carries lots of other delicious brands of products. Their pasta is excellent. They have great cold meat and meat for dinner as they have their own farm somewhere on the island. I guess today because it’s raining we will do laps around the top floor.

I can totally relate to the meme, leannec. On today' episode of Chopped, I will be using only ingredients found in my pantry and freezer to make a meat lovers pizza casserole. 

littlemama, I'm sorry you had to cancel your trip. 

smcast, Reubens are great w/creamy coleslaw and a good kosher pickle. Oh YUM.

cadoodlebug, I have only seen the movie, but I want to watch the show.

leannec, your students must miss you, too. A good teacher is priceless.

We rented a house on Mackinac Island, Mi the 3rd week of June. We are really hoping to still go.

leannec hopefully you’ll be back in the fall. Dd misses her kids too. She wishes they’d do their work. They still have the attitude that it’s optional. Parents do too and cuss the teachers out when they call to check in.
She had a whole group of girls that don’t have her as a teacher who came to school early to hang out in her room and vent to her. She’s surprised how much she misses that too now.

The big public district in the city has the police stopping at homes that aren’t doing anything for welfare checks.
The highway patrol is helping deliver meals on wheels too.

We are having burgers and I’m having a salmon burger. Pasta salad & broccolini to go with it.
Thinking about the food saver everyone has. Might order it today.

scrapmaven my DD is still not well. Bipolar out of control and eating disorder go hand in hand. She is so painfully thin. I'm terribly worried about her. But hopefully today I can get some calories in her. I made enough of the cheesecake bars to send her home with a full pan. So I'm trying to feed her. She will hopefully be in a good mood today.

leannec that is so sweet how you miss your students. I really respect how you made lemonade out of lemons going back to work. You are such a kind and sensitive person I'm sure those students miss you too.

littlemama ugh! I'm so sorry about your trip! Good news is that we are having beautiful weather today. Just put on your bikini and run through the sprinkler...lol

A quick post before I head back out to the yard. I'm making Ikea meatballs for dinner ala Corona-style. That means I don't have exactly *all* of the ingredients called for in the recipe but I'm going to improvise. No run-to-the-store-for-one-or-two-items trip for me; it's make do with what's in the pantry in between planned shopping trips for me. The current thinking is to serve them with mashed potatoes and corn but that could change when time to cook comes.

No, they are going to reschedule, but have not been able to do so yet.

I loved when he woke up to the horse riding Mountie in Canada. 

I'm so sorry. 

I loved the movie and can't believe I haven't watched the series. I've heard great things but it's just never made it to the top of the long list of shows to watch.

Happy Birthday to your DD, jeremysgirl. We really tried to make it fun and special for our DD yesterday, but the night still ended with tears because it just sucks not being able to go out with your friends, not knowing when this is all going to end. She is smiling and happy today, but the emotions are a roller coaster ride.

I gave the family a choice of tacos or quesadillas tonight and tacos were the pick. I think I'll roast spicy cauliflower bites to fill them along with salsa, slaw and guacamole.
