Good morning. Today is going to be mega-super busy. I have non stop appts all am and then my fluids this afternoon. Dh is going to order pizza.

We are having chicken Caesar salads using Tyson Black Pepper Herb Seasoned chicken breast. And iceberg lettuce. We are still wary of Romaine, although there is some in the produce boxes that are being delivered Friday. yikes

Good morning! scrapmaven I hope that your appointments go well and your visit to the vampire makes you feel wonderful! Last night I made up my own concoction with chicken, onions, red bell peppers, and mushrooms. I cubed the chicken and cooked it in olive oil on top of the stove until it was thoroughly cooked. I took that out of the pan put the onions, Bell peppers, mushrooms in pan then added butter, salt, pepper and some Italian seasoning to it. Then I added the chicken back with the vegetables, mixed in olive oil. I made thin spaghetti noodles, mix the meat and vegetables with spaghetti noodles added more olive oil Italian seasoning salt and pepper. it was easy and delicious and was a hit with all four of us. You know normally there’s only three of us that eat anything. The wildcard child is always the question. He loved it. Tonight, I have beef in the refrigerator I don’t know what type; but I think I’ll either do an Insta pot thing or slow cooker. I am keeping all of you in my prayers and thoughts. Calling **GypsyGirl** to the thread!

We are having chicken chow mein, sweet and sour chicken balls and egg rolls all from scratch. No idea why I decided to do this on a Tuesday. It may be a midnight snack instead of dinner by the time I get it all ready after work.

I so feel like I need a restart this week. Sunday was crazy (we processed a hog for the first time - happy we did it, but it was a bit overwhelming for a bit) - yesterday was spent waiting on other people so I couldn't really start anything I needed to do - it is Tuesday and I already feel behind for the week on both work and household stuff.
Tonight is Korean Beef over rice and a Chinese chicken salad. We have a bunch of veggies to use up, so I will probably roast a bunch, too. We have another Misfits box coming on Thursday I forgot about. LOL

We're having garden salads and frozen pizza tonight. DH is doing a group event in his video game he plays, so we're having something easy and quick.
This morning we had our video conference appointments with our rheumatologist. It's time for my Methotrexate dose to increase, since I'm tolerating the injections just fine. But I'll have to have lab work done at the end of the month to make sure everything is fine internally. I have an endocrinologist appointment in early June, and may be able to do that over the phone. But the blood has to be drawn first. I will do it all at one lab visit to limit exposure. Quest labs seem to be really on top of safety measures. Still, not happy about going in for such close contact though.

I made Honey Butter Chicken bites the other night and it was hit. They were super quick to make. The photo shows the chicken bites on mashed potatoes but we had the leftover with rice and that was good too. Honey Butter Chicken

Good morning ladies! I think I'm starting to find a routine for this life I'm living, it only took me how many weeks??
Dinner this evening is going to be a potato and ground meat casserole. I'm using up things that I'm afraid will go to waste.
I've walked 3 miles the last 2 mornings and feel so much better for it.

Happy Tuesday! The sun is shining, the birds are at the feeders, and the USPS has finally found the package that's been floating around Austin since Thursday and will deliver it today to my sister. All in all, it's looking like a good day! That package was mailed last Monday (4th). So much for 2 day Priority mail.  Today I am hoping to get some projects done around the house and in my sewing room. Dinner tonight will be the rechauffe grilled chicken and a salad. Last night we ended up eating some dishes from local restaurants I picked up at HEB so that pushed my plans for yesterday to tonight. DH loves Hugo's so I brought in a couple of their meals. scrapmaven - hope that all goes well with your busy day today.

For dinner here tonight I am making Swedish meatballs with gravy, mashed potatoes and lingonberry jam. Meatball mix is made, will cook them once I know how late DH is working.

Another small step back to the real world today. I was able to work at school for 2 hours. Only ten teachers in the building at one time and we have to wear a mask and get our temp checked upon entering the building. I put a small dent in the stack of work in the library. I can also go back for 2 hours on Thursday. Now I'm home to do some gardening and finish mowing the lawn.
We need to have leftovers tonight: Sloppy Joe or Chicken and Dumplings.
scrapmaven, I hope you can rest tomorrow after your busy day today.

We could have ribs for dinner. I am ready for some. There might be leftovers but I am not sure. We have so many condiments I need to do an overhaul and get rid of some. How many Dijon mustards do you need? I have 3. At least I don’t buy Costco sized any longer lol.

Today is recycle and I put our stuff at the curb last night. The house taught me to do this the night before in case they come early. Today they came at 7:30. Only I had my stuff out. They came at 8 again and no one had stuff out. It is 9 and 10 townhouses now have their stuff out. I have time to put more stuff out. I have some boxes and wine holders. Hmmm.

Delta Dawn , why be intimidated by your psych? He is there to support you and make you feel better. The more you tell him the better able he will be to prescribe the correct meds and dosages. You are a courageous woman and I'm so proud of you for taking care of yourself. I was really worried about you and now I can breathe a sigh of relief that you're in good hands.

tracyarts , have you thought about asking your rheumy for an order for home infusions? It will save you going out to a doctor's office or hospital clinic. In my case, my home nurse only does infusions and doesn't work w/covid patients. Since you're compromised your doctor might think that home nursing is a good idea. You have my empathy, because I understand. Chronic pain and Chronic illness SUCK ROCKS!

I found some boneless pork chops in my freezer but don't remember what recipe I intended to make with them, so I'll season them with with taco seasoning and serve them with mexican rice.

Good morning tribe! I was out of the house early and home by 9:30. I hit Walmart and the store was the least crowded I've ever seen. It was wonderful AND I hit the Trifecta! Lysol Disinfecting wipes, hand sanitizer and Soft Soap refills! First time I've seen any of those items since mid-March! Doing the happy dance. Little things make me happy. For dinner we will be enjoying Honey Mustard Garlic Chicken Thighs. Big wet smooches to the Pea who first posted the recipe! Hugs scrapmaven.

Hmmm...The arrows have been at their family cabin in the huge mountains to the north and have just now completed reading all of the threads they missed when they did not have any kind of modern wiring/technology services. They adore being up there. To all who are involved in any medical, family, neighborhood, 2RPeas drama and judgos Mcjudgos, or any other crisis, the arrows are on their way. It's the only thing that will help so they are all now comforting, soft, squishy, fragrant, and loving. Well, all but one. Sigh.
So much delicious food, several rock-star recipes, and many stories were posted and I am here to tell you that our dinners last week were simple and eerily similar to some of the other dinner thread folks who posted. My feelings were also so similar to some of yours that I know that aKathy is smiling and hugging from above. Carry on, friends!
That said, we are out of supplies here so we must go out to the store or else we will have TJ's marinated, grilled artichokes with frozen blueberries and wheat berries casserole with a sauce of really ancient wrinkledy-wrinkled acorn squash and chipotle mayonnaise. At this point, I am hoping for chili and cornbread muffins tonight.
Thanks for the thread. May you find your thoughts in a beautiful place even as you must endure more tests. You are our Queen Poobah!

And I am doooooooooone with my work day. Yay! I got word today that we should expect to go back in shifts when we actually return to work. And my boss said he wants my coworker in the office 5 days a week. Apparently, she's having trouble parenting 3 little kids full time and needs a daycare break. So I've been advised that I will most likely be continuing to work from home most days a week. I can't say I'm upset about that news. I kind of like working from home. So no complaints here. That was the best news of my day.
I'm just getting ready to shut it down and go out and run. I'm on the countdown to my 5K. It is the first time we've seen sunshine in about a week so my dog is also eager to go. So I'll have to slow it down for her. But she would be very bummed if she got left home. So I will take her.
Dinner tonight will be chicken salads. Nothing fancy tonight.

We eat 3-6 heads a week. And if your produce boxes are from local farms you are even less likely to have a problem. Last night I made up my own concoction with chicken, onions, red bell peppers, and mushrooms. This sounds delicious (well, except no mushrooms for me  ). I love simple sautees with pasta. I am kind of dreading this. I hope it went well. Just remember, you aren't trying to give a correct/right response to anything. You need to share as honestly as possible so your doctor can help.  Dinner is going to be pasta around here. Cheese tortellini for the kids, a roast vegetable ravioli for DH and sautteed spaghetti squash & vegetables for me and anyone else that wants them.

I came and read liked everyone’s posts like 3 hours ago and then shiny squirreled and didn’t post myself. Lol Tonight I’m doing drip beef sandwiches on pretzel rolls with au jous. The beef has been in the crock pot since noon. I made a batch bacon cauliflower salad and will do some sweet potato fries in the air fryer. So basically my house smells like roast and bacon. Carnivore heaven! scrapmaven I hope you get a good rest after all those appointments. I know how tiring of a day that is. I thought my Twilight days were way behind me. But I caved and preordered Midnight Sun. My internal 20something self just couldn’t pass it by. 😉🧛🏻♂️✨ peabrain thanks for the recipe share. I printed to try soon. cadoodlebug Good score! I hit the lotto last week online with Clorox wipes and Lysol multipurpose cleanser. I was like this is what my life has come to. Excited about disinfectant products.
