Thank you cakediva and crazy4scraps ! I think I have cream cheese but no shortening. May try some of this soon. Appreciate the help! The secret to a great pie crust is TenderFlake lard. Buy some the next time you are in Canada.

Thank you for sharing! I just popped this into the oven. I'm hopeful it tastes as good as it smelled going in to bake! What did you think of it?

Sure! The recipe we used today was an Anna Olsen one: 3/4 cup packed brown sugar 3/4 cup corn syrup 1/2 cup melted butter *whisk all together until smooth 1 egg 1 tsp white vinegar 1 tsp vanilla *whisk in *pour into 12 tart shells (we did half plain and half with chopped pecans) *bake at 400F for 5 minutes then turn down to 375F and bake for 20 minutes more Thanks - sounds good. I might try subbing maple syrup as someone suggested. Would you believe that I have NEVER found tart shells here? I've lived in Cali for over 30 years. Nada. I'm Canadian and have lived in the US - mostly California for 40 years. I was raised on butter tarts but have never met anyone who wasn't Canadian who has heard of them. I have had to make the shells by hand because butter tart shells are non existent in stores. In my hometown growing up you could buy them in the grocery store bakery department and that is still true. I make them often but every Christmas I have a Butter Tart Open House. I make dozens and dozen in the weeks before Christmas and then put them in the freezer. I invite a bunch of people over and serve just butter tarts and beverages. People start asking me in September when I'm having my Butter Tart Bash. LOL. One piece of Canadiana that I truly love and miss.

We're from Ontario but have been in Cali for over 40 years. I remember when we moved here there was no Mott's Clamato, so no Bloody Caesars, and NO SALT & VINEGAR CHIPS! Whenever we had family visit we requested bags of Lay's S&V chips.

I made homemade pizza dough last night and shared dinner with my parents. They live in my apartment complex and I help take care of them so they get to be my guinea pigs whenever I bake something new. I think it turned out great and everyone was happy.
This weekend, I'm making focaccia bread to go with spaghetti. My brother is a chef at a special needs camp and they have lots of supplies they aren't using so my mom and I got a pound of yeast. I'll have yeast for years until it goes bad!

I’m taking an online class today on how to make eclairs. The recipe the teacher emailed states that it makes 36! That is a lot of eclairs.
