4 dozen chocolate chip cookies are cooling.
3 loaves of lemon bread in the oven.
Next up is banana bread. I have 6 ripe bananas so that means 1 dozen muffins and 2 loaves.

I have cinnamon roll dough rising and baked a batch of oatmeal raisin cookies this morning.
I ate the last oatmeal raisin cookie the other day & you would have thought I committed a crime. I had no idea everyone loved them so much, so I replaced them!!

DH recently came home with a handful of big, beautiful lemons given to him by a customer so I am on the prowl for a good lemon recipe. I'm leaning towards baking cookies at the moment.

2 loaves of sourdough - our first since birthing our starter baby.
Buttertarts - some pecan and some plain. I've discovered these are a Canadian thing - tart shell filled with a mixture of brown sugar, egg, corn syrup and a bit of vinegar & vanilla - similar to a pecan pie filling you'd pour over the pecans. SO good.
And homemade mac & cheese is about to bake for dinner lol.

I baked no knead bread yesterday. It was so good, I made a loaf today also. www.jennycancook.com is the recipe I used. My dutch oven is too big, so I use two loaf pans for the first bake. It's heavier than kneaded bread would be, but the crust is amazing! Next I'm going to experiment with adding things to the dough.

I baked yesterday. Well sort of. I made Scottish Shortbread and that was made from scratch and baked. I also did some saltines toffee and some Ritz peanut butter chocolate cookies. This morning I mailed all of it to my mom because my brother is doing her food shopping right now and won't get her any treats.
Tomorrow I am baking some homemade lasagna to have for my friends for lunch on my birthday Thursday.
I used to make the shortbread many decades ago and I had to break out my old Better Homes Cookbook for the recipe. I may make it again at some point to take someplace when I have to bring something.
I normally do not cook at all. I am a terrible cook. But being in my house makes me think "Why not?"

I have rosemary focaccia bread in the oven right now. ETA I used this recipe from Just T littlespicejar.com/roasted-garlic-rosemary-focaccia-bread/We left out the garlic and it was so delicious -- nice crispy outside and fluffy inside. Lots of nice rosemary flavor. It was a hit. I made the dough in the breadmaker and just dumped it into the 9 x 13 pan after it rose.

I made cinnamon coffee cake muffins today.
Recently, I've made chocolate chip muffies (like Panera) and chocolate chip cookies. I also made cherry almond chocolate chip cookies to send to my mom for Mother's Day.
I also bought molds to make mini lady fingers.

SO good. And homemade mac & cheese is about to bake for dinner lol. Replace the corn syrup for maple syrup and then you have a TRUE buttertart. Don't forget the raisins.

The recipe we used today was an Anna Olsen one: 3/4 cup packed brown sugar 3/4 cup corn syrup 1/2 cup melted butter *whisk all together until smooth 1 egg 1 tsp white vinegar 1 tsp vanilla *whisk in *pour into 12 tart shells (we did half plain and half with chopped pecans) *bake at 400F for 5 minutes then turn down to 375F and bake for 20 minutes more
