I left DD's this morning and landed here at 1:00PM. I'm all unpacked and the washer is going  I've got Thai beef & broccoli over rice thawing that I made a couple weeks ago and put in the freezer in individual servings for days like this. Thank God or I'd have probably just had toast otherwise. What are you having tonight?

Toast sounds good to me. lol. I hate to cook.  However, I'm making chicken pot pie at ds's request. It's just the two of us while dh is overseas (dd is away at college) and I haven't done much cooking. But we got rotisserie chickens from Costco yesterday (yes, plural "chickens" -- I like to have leftovers). We've eaten a couple of the thighs, the legs, and the wings, and tonight I'll turn the breast meat into the chicken pot pie. I'm planning to make two pans of it, one with biscuits on top and one without. Then I'll freeze the one without biscuits and it will be ready for another meal when I can just add the biscuits.

We have soccer tonight (can't wait for the 2 month break between sporting activities). Last night I made a pot of butternut squash soup to have tonight. I'm not known for my soup making skills and this one doesn't look as thick as I'd like it to. I think I might add a pureed sweet potato to it to give a better consistency - do you think this would work?
I need to pick up a crusty bread to go with it, which I'd planned on making myself but ran out of time last night.

Hmmm, wonder if I have any potato flakes (that are not way past their sell-by date), that would save me a step of having to cook and puree the sweet potato

Ok so I ended up fixing plain nachos and hormel tamales. All I had to do was warm up the nacho sauce and tamales. Everyone enjoyed it, and dd had the chips with her salsa. Hormel tamales are gf!
Original: Pasta in a red sauce and salad. I need something easy after the crazy day we had yesterday and this darn migraine that won't go away. Dd has one too. Ugh

Crash potatoes. Cut-up potatoes marinated in garlic and red pepper sauce and a few other seasonings. Bake for a while. Top with cooked chicken, also marinated in the same sauce, bacon, chopped green onions and cheese. A family favorite and is a perfect way to fill the hollow legs of two teen boys....  I will probably serve a salad with it. Lisa

I had planned on leftovers from last night, but there was a whole lot of it and I ate it for lunch.  So now I have no clue. And what is worse? I am really hungry and will need to sort it out soon.

Meeting with a committee to plan our annual Memorial Mass to remember those that passed away this year.....so we're doing a potluck. Thankfully I know everyone and am not skeeved out, otherwise I'd be hitting up the drive-thru.  I made 36 deviled eggs and am bringing some decorative napkins and munchies.

I had a lasagna ready to heat but my daughter came home from rehearsal with a sore tummy, so we stopped at whole foods for chicken noodle soup for her and salad for me.

Okay, we ended up with my old standby TJ's rice/orzo mix with chunks of chicken and peas mixed in. I like it, the kid likes it, and it takes about half an hour start to finish (assuming you already have some cooked chicken to toss in).
