I have 2 boneless loin chops leftover from dinner last night. Unfortunately I did overcook them and they are a little dry. How can I reinvent them for tonight's dinner?

Chop and toss in soup.
Other than that, you cannot really revive overcooked (dry) meat.

I’d marinate them in some broth, then shred and add sautéed onion and bbq sauce, serve with coleslaw on a bun.

Cut them into little pieces or shred, then make a ragout with tomatoes, onions, mushrooms, peppers. Serve over buttered egg noodles.

I had the same situation recently. As said above, I made wonderful fried rice with them.
The next thought would be to chop up and add BBQ sauce to them. I have done that before and you wouldn't know they had been overcooked.

My pork chops usually come out really dry. The last time I made them I cooked them and then covered them with a can of cream of bacon soup. I added cooked rice a nd a little water and simmered for about 15 minutes. Best pork chops I've ever made!
