Here is the recipe I use for zucchini cake. But I often add up to 8 cups zucchini. What can I say? In the fall we have a lot of the stuff! Do everything the way it says in the recipe, but then...

I divide Half the batter into two 8” square pans and bake as directed in the recipe  Then I add 1 1/2 cups oatmeal and 1/2 cup raisins to the remaining batter and it makes two pans (24 mini muffins each). Bake a pan on muffins at 400F for 20 minutes or until done. |
