Dinner with our pastor's family was fun last night but a lot of work so I'm taking tonight off. I'm meeting friends at the bar at 4:00 for Happy Hour and we'll see what everyone is planning. There's always bar food or the steakhouse across the street from the bar  What are your plans for tonight?

At this point in my life, bar food sounds fabulous. I don't even drink at home anymore because I'm responsible for a small child. Have fun without me.  I took out a pound of ground beef and I think we'll have chili rice and artichokes. I found some at TJ's (it's been a lean year for artichokes for some reason) and the kid loves them.

We're going to a dinner/fundraiser at our son's school. Last year the preschoolers made crafts for the fundraiser and I sure hope they made some this year too. I will for sure be bidding on stuff my kiddo made  My Pre-k kid is excited to have dinner at school haha. Oh and dinner is turkey with all the fixings!

I have a chicken roasting in the oven. It really needed to be cooked, so I followed Pioneer Woman's recipe (butter, lemon, rosemary.) I have no idea what I'll serve with it...I mostly want it for the sandwich meat this weekend. Just DH and I for dinner with the 7.5 lb chicken

It'll likely be a 'free night' here, or leftover meatloaf from last night. My kids LOVE meatloaf actually, and I had to make them both stop eating last night, lol.

One kid,is at a party, two others are having,pizza at home. DH and I are having,roasted asparagus, mushrooms, French beans marinated,olive oil and balsamic with goats cheese and,toasted pinenuts. DH is also having a steak, I just don't feel like meat tonight.

I have Splurge Club tonight with the ladies from my meetup group ... appetizers and wine  That leaves dh to grill some steaks and I'll roast some baby potatoes for him and the dd's ... some kind of veggie as well ...

My chicken fingers turned out soso good. I cut boneless breasts into strips. I soaked the strips in buttermilk for about an hr. I mixed seasoned Panko crumbs with lots of pepper. Rolled each strip in crumbs and put in a hot skillet with olive oil. About 10 mins per side or until well browned and no pink centers. So crunchy and well flavored.

We had a YOYO night tonight (You're On Your Own). DH was out with co-workers as they're hosting some Indian folks.  DS had cereal, the girls and I had popcorn chicken and chips.

CROCKPOT POTATO SOUP 1 30oz. bag of frozen, shredded hash browns {I used Ore Ida} 3 14oz. cans of chicken broth 1 can of cream of chicken soup 1/2 cup onion, chopped 1/4 tsp. ground pepper 1 pkg. cream cheese {don’t use fat free. It WON’T melt!!!} In a crockpot, combine everything EXCEPT for the cream cheese. Cook for 6-8 hours on low heat. About 1 hour before serving, add cream cheese and keep heated until thoroughly melted. Serve with cheese, sour cream, bacon bits, green onions, or whatever else you think would be good! ETA: I cut and paste this from a blog. I used a different brand of hash browns and all was fine.

Oh, yum. What I wouldn't give for a leftover meatloaf sandwich right about now. Right from the fridge, on white bread w/ketchup. Yum. I was going to make the chicken I had defrosted for Tuesday nite, but after 4 days in the fridge, it was slimy so we ended up having grilled cheese & tomato soup. Trader Joe's Organic Tomato Soup to be exact. The best tomato soup I've ever had, I must say.
