Saute fresh mushrooms and leeks. In large bowl mix par boiled fresh string beans with mushroom mixture and cream of mushroom soup. Add in can sliced water chestnuts if desired. Bake as usual . Top with whatever you like.
So much better with fresh ingredients!

I think this is one of those dishes where you either like cream of mushroom soup casseroles or not. I don't think fresh mushrooms or green beans is going to make a difference to those who don't care for cream of mushroom soup dishes. You either grew up with this dish and like it or you don't.

I used fresh green beans and homemade cream of mushroom soup one year. There was screaming and tears. I had to make a small batch of my regular GBC to take to my nieces the next day, for their leftovers, so they would stop calling me by my first name I don't eat it, so I have no dog in the fight. The rest of my family said it was good, but not what they had been looking forward to. I don't mess with Thanksgiving recipes anymore.

I didn't grow up eating green bean casserole and was so horrified by the abomination my mother in law has served since the 70's that I found better recipes. Mine is a mash up of Martha Stewart, Ina Garten and Alton Brown's recipes. I make fresh cream of mushroom, use lots of garlic and bacon, fresh greenbeans and I always make my own fried onions for the topping. Still not my favorite dish, but it's always a huge hit at Thanksgiving.

We always have done fresh green beans, trimmed and julienned and sautéed with some butter and lots of toasted slivered almonds. Super, super good. I’ve never had a green bean casserole so no idea if I’d like it. I do know - that in the past 15?years when I tried to make a casserole with cream of mushroom soup it came out funny tasting.

My extended family loves the original and since it's so easy to travel with (all cans and maybe use a disposable pan) I bring it to every family gathering, even though I don't always have any myself. I never make the original at home, but I do plan to try a fresh recipe soon. However, the whole reason for trying something new is to avoid using cream of mushroom soup--the water chestnuts do sound intriguing, I might have to include some of those. I will use the French's fried onions though, the ones on top are my favorite part!

As long as everyone is okay with the change. In my group, same thing year after year. It's a looked forward to tradition. Any changes to the usual item, dish, etc.....do not go over well.
