Seriously. What is with the glut of no bake cheesecakes over baked cheesecakes? I want REAL cheesecake, none of this gelatinous stuff. I want the real, dense, baked cheesecake and I'm coming up with nothing inspiring. Nothing at all. I don't understand why no bakes are so popular... they aren't really cheesecake and they taste funny. And I generally avoid them because of the gelatin.
I have a birthday cheesecake to make next week and I need a trial run before that. But at this rate, I'll be doing a plain cheesecake (boring) with a cherry topping.
It's a very first world vent, but I had to get it out. It's the second Monday of my week and I'm a little cranky.

I love no-bake cheesecake (no, it doesn't taste funny) but I love baked cheesecake too. We like Ina Garten's cheesecake recipe.

Go to the Kraft Food Canada website. They have some amazing baked cheesecakes there. I also use some from the "Company's Coming" Dessert cookbook.
I will make a lemon cheesecake and will add fresh blueberries (just a soft fold-in) and bake the cheesecake. Yummy!

I don't know how to describe the funny taste I always get when I have no bakes... but it just always tastes funny to me. Is this the recipe that you use: Ina Garten Mixed Berry Cheesecake
ETA: I was looking at the Kraft website this morning. I will go look again.

i use a recipe out of the Juniors (brooklyn deli) cookbook....it's justplain cheesecake
what do you mean by 'cherry cheesecake' if it isn't a plain topping with cherry?
is there cherry in the the actual cheesecake?

shescrafty... that chocolate cheesecake looks really interesting. I'm planning on cooking up a cherry pie filling for something else anyway, so I could make extra for that. And the recipient of the cake loves chocolate!
ginacivey... yes, I want more than a plain cheesecake with topping. I want something interesting with cherries in the batter and there will be another cherry topping on top. Unfortunately, I get these visions in my head and sometimes when I try to find a recipe to springboard from with these ideas I get frustrated because it's not even close to what I'm thinking. Which of course is why I want to springboard from the recipe... so it's a vicious catch 22.

Lemon Cheesecake Crust: 1/3 cup butter, melted; 1 1/2 cups vanilla/graham crumbs; 1/4 cup brown sugar Mix together and press into a 9" springform pan. Bake at 350* for 10 min. Cool
Filling: 2 - 8oz cream cheese, softened; 3 eggs; 1 cup sugar; 3 tbsp. lemon juice; 1 tsp grated lemon rind. Beat the cheese until creamy. Add eggs, one at a time. Add the sugar and lemon. Pour over the crumb-lined pan.
Bake at 350* for 30 minutes until firm.
I will fold in fresh blueberries or fresh raspberries just before pouring into the pan. Yummy edited to add: you could add halved cherries by poking them into the batter. That way here won't be a cherry-juice swirl. Then add a cherry topping when serving. This could also be done with the chocolate cheesecake.
Best Chocolate Cheesecake
Crust: 1/3 cup melted butter, 1 1/2 cup graham crumbs, 1/4 cup sugar, 1/4 cup cocoa -- Mix together and press into a 10" springform pan.
Filling: 3 - 8oz cream cheese, 1 cup sugar, 4 eggs, 1 cup sour cream -- Beat cream cheese and sugar until blended. Add eggs and sugar, mix until creamy. Add eggs, one at a time, then blend in the sour cream.
Melt 2 cups of chocolate chips with 1/2 cup butter, slowly until just melted. Add to the cream cheese mixture. Blend into the cheese mixture and pour into the prepared pan.
Bake at 325* for about 1 1/2 hours until center is firm.

That chocolate cherry cheesecake sounds good! OR, What about modifying a plain cheesecake recipe and adding cherries and amaretto? You could coat the sides with toasted sliced almonds and top it with cherries.

You do have to read the reviews and cook it at the low temp for a long time and then leave it in the oven with the door cracked to cool.....It is the best! And works great with any topping....

My entire family and I like the EXACT cheesecake you described....REAL, and DENSE.....!!! My Mom was a gourmet cook, and she made the YUMMIEST one---it's the ONLY recipe I use! I've tried others, but none compare. I was going to type out the recipe for you, but then remembered, it's from a restaurant in New York (1940's or 50's? , annnd we have this thing called "the internet machine" so I'll include a link. The first LINDY'S I found is this one----it's not actually the same as my Mom's, but the ingredients sound yummy. Also, my Mom always made a GRAHAM-CRACKER crust----this recipe has a "pastry" crust that you might prefer; but everyone in our family LOVES a standard Gr. whoa.....this one sounds REALLLLY good, (except, again---the crust doesn't appeal to me)... I might have to break tradition and NOT use my Mom's cute, handwritten recipe next time.... I didn't realize there are different versions of "Lindy's", annnnd, I had no idea this restaurant is STILL open! Tyler Florence has the best dense cheese cake recipe. Let me know if you want the recipe, or you've found one to try. His is delicious. I make it for the family at Christmas.

I'd use a plain cheesecake recipe like Juniors and add about 1/4-1/3 cup of Kir ( it's a black current liquor) for part of the liquid and stir cherries into the batter. Then I'd cook a cherry compote to top each slice with. yum! Now you have me craving cheesecake... the baked kind because I like them much better than no bakes.

I have been using chantal's new york cheesecake recipe on allrecipes forever. it's sooo good. It's dense and yummy. I get rave reviews when I make it.
I would probably make a thick cherry pie filling. Put half the filling in. put some of the cherry pie filling in by spoonfuls and do swirls of it. put most of the rest of the filling in and top with more spoonfuls of filling. Spoon the remaining filling over the spoonfuls of the cherry pie filling and tap on the counter top a few times to level it out.
Bake according to the directions.

akathy and msbee.....I always forget that fruit (and other goodies!!!!) can be baked INTO the cheesecake! Both of yours sound SO yummy! I have allllways made the plain cheesecake and topped it w/ strawberry glaze.....me thinks I need to expand my horizonsss!!!!
