I have started narrowing this down (probably going with "Ask Damien" courses, but haven't calibrated my monitors yet) but am interested in more recommendations. I have played in PSE in the past but I am much more comfortable in LR. Looking for a course that will speak to me and move at my own pace. Don't think I particularly need one with cc of my work. Really want to learn to work with layers and the things I cannot do well in LR. PS. Just realized this board and the others were here. Oops! Will try to stop by regularly.

I took a few beginner classes at Jessica Sprague. I like that I could watch the video & rewind as needed until I understood the task.

I bought a book by Scott Kelby and just knocked out a few pages each night. I learned a lot that way and I love his writing style! I know it isn't really a class, but it worked well for me and I still refer back to his books quite often.

I took a class over a year ago from Texas Chicks. It was 4 weeks long, with homework, a private forum, and really good PDFs to keep, etc. It was really useful for learning to edit photos!

Another fan of Scott Kelby. (I got Lightroom for Christmas...along with a companion guide so I can learn how to use it most effectively)
