the Kitchenaid mixer?
I try this every now and then and I'm always disappointed. I don't like how stringy it gets before it's all even done shredding. This time I broke each breast up in 3-4 pieces before I started to see if that would help but it was just as bad. In my experience it's barely a time saver, especially factoring in washing out the bowl and beater. I've never minded shredding with two forks anyway and the results are so much better.

I don't do it. I don't know, something about the idea of beaten chicken doesn't appeal to me. lol My mixers are for baked desserts. I'd rather shred with forks because I like bigger pieces anyway.

Ive never bothered to try it, I hate having to clean my kitchen aid mixer bowl and the attachments. Two forks and a plate works just fine.

While I can't stand the sound of two forks scrapping against each other (which inevitably happens when trying to shred meat...) i still wouldn't consider using my mixer for shredding, mostly to avoid having to clean the bowl & beater. We have the big plastic claws for shredding meat & they work just fine for us.

I've done it a few times and I don't care for the texture of the chicken. It's too pasty. For years I used two forks, but more recently I've started wearing vinyl gloves and just tearing it apart with my hands. I can get at the meat more thoroughly this way, with less waste. Then I pile it all on my cutting board and chop a couple of times to make the pieces more bite size/uniform. I don't know why I didn't do it this way years ago.

I don't have a Kitchen Aid anymore, because I never used it lol but I think shredding chicken that way is just weird and can't imagine it doesn't destroy the texture. Two forks for me.

I do it in the pan the chicken boiled in and use my handheld KA mixer with the 2 beaters on.

The only time I really do it is for an egg roll recipe. I like that it breaks it down quite a bit so it’s easier to fill. I don’t care for chunks in this particular recipe.
But yes if you let it go too long the textures goes from stringy to more ground meat texture.

I have found there is a very narrow band of time during Kitchen Aid shredding where the meat goes from nicely shredded to way over shredded. Ick.
My DD makes shredded chicken and shredded pork fairly often. I bought her the original Bear Paws Shredder Claws. She really likes them. I haven’t used them because my DH hates shredded meat.

Funny you bring this up...my recipe last night called for shredded chicken. I didn't want to dirty the stand mixer, so I started doing it with forks. But then I just cut it into cubes so I wouldn't have to deal with shredding it at all.

I've never used my kitchen aid OR two forks. I shred chicken with my bare hands or cut it with a knife, lol.

I usually cook the chicken in a crock pot for shredded recipes and it is too tender for my mixer without making mush too . I prefer using my pampered chef mix and chop for chicken. But I do love using my mixer for pulled pork, it turns out better and I usually make a big enough quantity that shredding by hand would be a pain.

I can't do any crockpot chicken, so there's that, too.
DH once thought he'd put it in the food processor and was sad he did so because it was annihilated! So funky.

I've never found it hard to shred meat with a couple forks or my hands, so haven't been tempted to try using my KitchenAid. By the time I lug it out and plug it I'm, the meat is shredded.

I think it's great for those that find it helpful, but glad I'm not the only one who doesn't find it life-changing. Now to figure out what to make with two big containers of chicken strings haha. I think enchiladas are in our future.

I have never tried shredding chicken in my Kitchen Aid...probably because my Kitchen Aid weighs a TON and it is stored on the bottom of my pantry. It wouldn't be worth it to lift that thing up onto the counter just to shredded some chicken when a fork works just a well.

When I cook meat to be shredded, it is usually in the crockpot or the pressure cooker. When I try to shred the meat in either one of those, I end up splashing myself or making a mess. And I take more time trying not to make a mess. My kitchen aid is on the counter so it is quicker to just put the meat in there, shred, then put it back in the crock pot. It doesn’t take long to wash the bowl if I do it right away before things start to stick.

I like that the mixer breaks up chicken into a fine shred. That said, I often find the texture of meat completely off-putting so shredding chicken breast is an improvement in my book.
I can see how it could be disappointing if your goal was a more meaty mouth feel.
