I'd use it in a spinach salad with feta, onions, tomatoes, cucumbers, whatever else I have on hand that sounds good.

I don’t like any reheated chicken dishes. When I buy a rotisserie chicken it’s to make a large main course salad with. Any leftover chicken gets eaten in simple, cold, sandwiches the next day - good crusty buns, buttered and with mayonnaise, sliced or chunky chicken (never shredded), topped with lettuce (and tomatoes if we have good ones). One of my most favourite dinners.

How industrious do you want to be?
If you have yeast on hand, make up a batch of bread/roll dough. Let rise for 30 minutes or so.
Mix chicken with BBQ or buffalo sauce.
Punch dough down and pull off a portion and press into a flat round circle. Put some of the chicken in the center and maybe a bit of cheese and bring the edges up and around the chicken filling and pinch to seal. Roll on the board to make a ball.
Let rise for another 30 to 45 minutes then brush with butter or egg wash and bake.
Is it easy? No. Is it healthy? Also no.
But tasty? Oh yeah.

super yummy and easy, something all of us like
It is just chicken broth, chicken, soy sauce, wheat ramen noodles carrot, then you add cabbage, green onion after cooking

Our absolute favourite way of using left over cooked chicken is a condensed chicken soup recipe - sorry, but it’s delicious!
One tin of condensed soup plus one can of water, a squirt of mayo, half a tablespoon of curry powder, mix together and warm through, add the chicken and cooked broccoli florets. Place in an oven proof dish with a mix of breadcrumbs and cheddar on top and grill until crispy. You can use raw broccoli but it will need a little more water and baked in the oven for a while until they are tender.

I hate soggy waterlogged noodles so I add to each bowl instead of the entire pot. I like to add noodles per serving, too. Not only do they get soggy but absorb all the good broth. Soggy chicken noodle stew is not what I ordered. Lol

Whenever I go to Sams club I buy 5 of them. I take off the thighs and put those aside then I debone the rest and freeze them in 3 individual bags.. I season the thighs with lemon seasoning and fry them up some for dinner that night. Everyone's favorite meal.
I use the frozen chicken for: quick alfredo pasta Barbecued chicken sandwiches Quesadillas or fajitas lemon chicken with orzo pasta (my play on chicken picatta) Green chicken chili Green chicken enchiladas chicken soup hoisin chicken stirfry broccoli/rice
I love rotisserie chicken

I use leftover cooked chicken (from Costco or home cooked) for many of the above suggestions. My favorites are: chicken soup ... I make stock from the carcass, or use boxed broth chicken spaghetti www.foodnetwork.com/recipes/ree-drummond/chicken-spaghetti-recipe-2108829(The recipe calls for starting with a whole, raw chicken, but I usually don’t. But do add some chicken broth or boullion to the spaghetti cooking water, because it makes a big difference to the flavor.) Sometimes I’ll use a boxed or packet rice mix or stovetop stuffing, and add some veggies and leftover chicken for a one-pot dinner. Usually I melt cheese on top for rice, or make gravy (from a mix) for stuffing. That’s for the nights I just can’t bear actual cooking. Anyway, any meat left on the carcass when I’m ready to start my soup pot goes into a large ziplock labeled with the date, and into the freezer. I pull out what I need for quick dinners, chicken salad, or whatever. It breaks apart easily and defrosts quickly if you chop it into bite-size pieces before freezing. When the next chicken comes along, I just add more meat to the bag. Every couple of months, I make sure to use it all up and start a new bag. P.S. the kid loves ramen noodles (and the peas have me using fancy organic ramen) and I add chicken and veggies to his ramen, too.

burritos or butter chicken are my two "go-to's" for leftover chicken.
i always have rice and keep jars of butter chicken sauce in the cupboard and packages of naan in the freezer.
not sure i would have everything needed to make it from scratch (and to be honest, i wouldn't... the jars are pretty darn good and waaayy easier!)

But last week I’ve been feeding it to my injured dog because she just wouldn’t eat any dry kibble and I needed the pup to eat so I could give her some meds. I actually broke down and bought a day old (refrigerated) rotisserie chicken from Target specifically to feed to the dog! How sad is that? That was smart! Ha ha, I don’t know about that. Now the dog won’t eat her food WITHOUT some chicken in it! But it did work out pretty well for the week when I needed the dog to eat something since two of the three medicines I had to give her twice a day had to be with food to prevent her from getting an upset stomach. Before that I had tried wet food (no), soft treats (no), even liquid chicken broth (no) and I was at my wits’ end. Her injury was near her mouth which complicated things even more because she didn’t want to chew. Then I read online somewhere to try rotisserie chicken and we happened to have part of one in the fridge, so what the heck it was worth a shot. Yup, she was willing to eat that.

with leftovers I ususally make Lemon Chicken Orzo Soup (cook the orzo separately and add to the bowl) I've tried a few recipes and I like this one from Good Life Eats blog best. The addition of a couple of tempered egg yolks in the broth adds a nice richness
INGREDIENTS For the Chicken: 1 lb. chicken (I like boneless, skinless breasts) 1 stalk celery, cut into thirds half of a lemon, sliced handful of fresh parsley 1/4 teaspoon each salt and pepper 2 bay leaves 3 sprigs thyme 1 cup water 1/2 cup chicken broth For the soup: 1 onion, diced 2 cloves garlic 1/3 cup white wine 3 carrots, sliced into rounds 6 cups chicken broth 1/2 - 3/4 cup orzo pasta, uncooked 3 egg yolks 2 - 3 tablespoons fresh lemon juice salt and pepper, to taste 2 tablespoons fresh parsley, minced 1 1/4 teaspoon fresh thyme 2 - 3 large handfuls of fresh baby spinach, chopped
INSTRUCTIONS For the chicken: Combine all the ingredients in a 5-liter pressure cooker. If the chicken is frozen, that is okay. Bring the mixture to a boil. Secure the lid and bring to high pressure. Once high pressure is achieved, cook for 20 minutes (for thawed) or 30 minutes (for frozen chicken). Remove from heat and let pressure release completely before opening the lid. Let the chicken cool until it is cool enough to handle. Shred and set aside. For the Soup: Add 1 tablespoon of olive or canola oil in a large dutch oven. Saute the onion over medium-high heat until golden and tender. Add the garlic and saute for 1 minute more. Add the white wine and cook for 2 minutes. Stir in the broth and carrot. Bring to a boil. Meanwhile, whisk the egg yolks and lemon together. Add 1 cup of hot broth from the dutch oven very slowly to the egg yolk mixture, whisking as you pour. Then, transfer the mixture to the dutch oven. Stir in the orzo and chicken. Continue cooking over medium-low until the pasta and carrots are tender. Just before serving, season to taste with salt and pepper. Add the thyme, parsley, and spinach. Serve immediately.
I also make a savory/sweet chicken salad using plumped up dried currants, celery and season w/onion powder and lemon pepper
I'll also fry up some taquitos and serve w/avocado salsa, some shredded cabbage small diced tomatoes and a sprinkling of cotija cheese

There's just two of us, so when we get a rotisserie chicken, we have it as is on the first meal. Then the next two days we have hot chicken sandwiches on rolls and similar to Craftedbys. I usually have some naan bread in the freezer, so we make chicken flatbreads. I like to do a chicken, bacon, ranch flatbread, DH prefers barbecue chicken.

Mexican chicken
Make 1 pkg yellow rice according to directions When it's done, add 1 can drained/rinsed black beans and 1 can drained corn Stir together Add shredded chicken Stir all together
Serve on a plate with sour cream and shredded cheese. Use nacho chips to scoop it up.

what is butter chicken sauce? butter chicken is an indian dish. doesn't have to be spicy, more creamy (although my mom would dub it as spicy) although you can get varying degrees of heat. costco has a nice one! found on the internet: Butter Chicken (known as murgh makhani — chicken with butter), is similar to British tikka masala. Prepared in a buttery gravy with the addition of cream gives the curry sauce a silky smooth rich texture. i serve it traditionally with basmati rice and naan bread. soooo yummmy!!
