I’m looking for a new to me idea for dinner. What’s your favorite thing to do with leftover chicken? I’m the only one that will eat soup so that’s not a possibility. We have done tacos/burritos, quesadillas, cabbage stir fry, bbq sandwiches. Nothing is sounding good right now. I also don’t want to go to the store but have a fairly stocked pantry/freezer. I’ve googled and nothing really sounded good or we were missing items or they wanted me to pay to read the article . So I came here. The Peas rarely disappoint. .

I usually freeze leftover chicken for a later use. Why couldn't you make some soup just for yourself? Freeze it in single-serve containers and then you have lunch all set for awhile.
Mostly I use leftover chicken like that for soup, stew, tacos, shredded bbq (like pork, only with chicken, lol), chicken tetrazini (same as the turkey stuff but we don't like turkey), chicken salad... We also just eat it cut up on our plate with some sides.

I usually just add Mayo and make a sandwich our of it. If I am feeling more inspired I will add hard boiled egg and grapes and then the sandwich is really good.

Totally unhealthy, but good comfort food:
Slow Cooker Chicken and Dumplings
Main Dish - Chicken Prep Time: 10 min Cook Time: 6 hr Servings: 8 servings Source: Allrecipes.com
INGREDIENTS
4 skinless, boneless chicken breast halves 2 tablespoons butter 2 (10.75 ounce) cans condensed cream of chicken soup 1 onion, finely diced 2 (10 ounce) packages refrigerated biscuit dough, torn into pieces
DIRECTIONS
1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

Creamy Chicken Crepes from AKathy’s kitchen
Crepes: 3 Eggs, beaten 2/3 cup flour ½ tsp salt 1 cup milk *Combine ingredients, beat until smooth, let stand 30 minutes. Pour ¼ cup batter onto hot lightly greased 8" skillet. Cook until underside is lightly browned. Filling: ¼ cup margarine ¼ cup green onions, sliced 2 cup mushrooms, sliced 3 Tbsp flour ½ tsp salt dash of pepper 1 cup milk 2-½ cups (10 oz) shredded cheddar cheese, divided 1-½ cups chopped cooked chicken *Preheat oven to 350˚. Sauté veggies in margarine. Blend in flour and seasonings. Gradually add milk and cook, stirring constantly, until thickened. Add 1½ cups of the cheese, stir until melted. Stir in chicken. Fill each crepe with 1/4 Cup filling, roll up and arrange in 9x13" baking dish. Bake for 20 minutes. Top with remaining cheese, continue baking until cheese is melted.

Final step is adding egg noodles. I hate soggy waterlogged noodles so I add to each bowl instead of the entire pot.

Chicken pot pie or chicken salad These are my go-tos with leftover rotisserie chicken. Sometimes I chop it up and make chicken fried rice out of it too. There are a bunch of recipes for leftover chicken in The Dinner Doctor cookbook. But last week I’ve been feeding it to my injured dog because she just wouldn’t eat any dry kibble and I needed the pup to eat so I could give her some meds. I actually broke down and bought a day old (refrigerated) rotisserie chicken from Target specifically to feed to the dog! How sad is that?

We make wraps with rice, cucumber, crunches and sesame dressing with left over chicken. Last night we had chicken pesto sandwiches. Just pesto, mayo and rotisserie chicken on toasted sourdough. My favorite would probably require going to the store but I make a cider style pot pie. Just brown some shallot or onion, add hard apple cider, broth and mascarpone, rotisserie chicken heat and put in soup bowls and top with puff pastry.
Also I make a lentil mexican dish with leftover chicken. Just make a simple roux, add some broth and salsa and mix with the chicken. Put some corn chips in a casserole dish, top with cooked lentils and chicken mixture. Add some cheese and repeat. Cover and bake 30 minutes and then remove foil and bake until cheese is browned.

I love to use leftover chicken or meats and veggies to mixed up with pasta and use pesto or a garlic sauce on it. And lots of Parmigiano cheese. I call it my kitchen sink pasta dish. Its a great way to use leftovers or soon to be going bad veggies(I roast them under the broiler with eevo +seasoning)

easy chicken enchilada bake
filling:
shredded chicken shredded cheese diced green chilis (optional) any other ingredients you want to put in (diced onions, olives, or whatever)
sauce: 1 can hormel chili NO beans 1 can cream of chicken soup 1 can cream of mushroom soup sliced green onions
8" flour tortillas
grease or spray a baking dish mix filling ingredients and roll into flour tortillas. place rolled tortillas side by side in baking dish mix sauces and pour over enchiladas. top with more shredded cheese
bake at 350 until bubbly (45 minutes or whatever your oven bakes at)

I mix shredded chicken with cream cheese (light on the cheese) wrap in tortilla, throw salsa over the top put in glass pan and microwave for 10 min. tastes good

Chicken salad Quesadillas
I also make a sort of chicken hash with potatoes, broccoli, chicken and cheese. - just cut it up and cook in some butter in a pan until the potatoes are soft and the broccoli is cooked. Throw in shredded cheese at the end and let it melt.

If I have a rotisserie chicken, I'll put aside the the breast meat before letting the family eat the dark meat for dinner.
The breast meat gets turned into chicken salad.
Any rare leftover dark meat is added to a stir fry or used in sandwiches/paninis/quesadillas.

As a little kid I called all pot pie Chicken Pox Pie, so there is turkey Chicken Pox Pie and beef Chicken Pox Pie. It started when my 4 siblings all got chicken pox when I was in 1st grade and we had chicken pot pie for the first time. I managed to combine the two new things, and no one in my family ever corrected me. I was in high school when I realized it, and tried to correct in front of people who weren't family. Now in my mid 50s I'm tired of trying to remember my weird peccadillos and let my freak fly. I must have been British in a past life. When I started school I struggled mightily with spelling things in the American way. It mostly involves the adding of the letter u to words like color making it the British spelling colour. Tons of spelling tests and writing assignments with errors like that.

hot chicken sandwiches
Chicken Tetrazzini (not healthy - it has a cream of ... soup in it)
2 tbsp margarine 1 medium onion 1 clove garlic, minced 2 cups (or more) cut up chicken 1 - 10 oz. Can cream of chicken soup 1/2 cup milk 1 tbsp chopped parsley ½ pkg linguine or spaghetti 1/4 cup grated parmesan cheese
Saute onion and garlic in margarine until tender. Add chicken. Stir in soup, milk and parsley. Simmer, covered for 10 minutes. Meanwhile, cook pasta, according to package directions, cooking only minimum time indicated. Drain and put into casserole dish. Cover with chicken and sauce and sprinkle with parmesan cheese. Bake at 400 for 15 to 20 minutes.
