I signed up with one other person to bring a dessert item to a tailgate on Sat. I saw the final list of people and there are 43. I was thinking I'd bring an 8 x 8 pan of bars but now I'm feeling personally responsible for providing enough dessert for everyone. I'm forcing myself to step back and make just one more thing, but just wondering what is a reasonable amount of dessert for 43 people?

You should definitely be coordinating with him or her to make sure there is enough. I find that when there are two desserts, a lot of people take a half portion of each. Then again, a lot of people also only take the one that they find most appealing. And, some people don't eat dessert at all. I'd plan on bringing 30 servings of something and let the other person bring 30 servings of something. You'll have leftovers, but I'm of the belief that it's better to have leftovers than not having enough.

I agree with the Birdhouse lady, fancy rice krispie treats (or heck, just rice krispie treats with jimmies/sprinkles on the top) would be easy & not too expensive to make. Or if you're feeling ambitious, make cookies! And yes, you should bring enough for 43 people and if there are leftovers, all the better.

Our staff appreciation lunches are for 40 staff. I ask for 6 9x13's or 1 dozen cupcakes, etc.

If I was you I would be taking at least 43 portions of whatever I make. And there will some who will take two full portions, one of each. Better to have leftovers than to have people grumble about not getting any.

This should help: Each listing is how much of that item you would need for 40-50 people if you were serving only that item.
4 dozen cupcakes
3 8x8 pans of bars
3 10 inch pies
2 8 inch double layer cakes
1 9 x 13 sheet cake. Thick.
9 dozen cookies
If you were only serving dessert you would figure 3 pieces per person.

Better to have leftovers than to have people grumble about not getting any. When I have to make enough for a crowd, I bring enough *for* the crowd. That means if there are 15 people, I bring 15 servings of whatever the item is, regardless of how many others are also assigned to the category as well. You never really know how the crowd is going to manage their food consumption that day, and I am very much a "better to have it and not need it than to need it and not have it" kind of girl-particularly when it comes to food.

Also...if you're making cookies/cupcakes/bars know that most people will take more than 1. If it was me, I'd bring 6 dozen. I'd much rather have leftovers than not enough.

I would definitely bring enough of my dessert to give every person at least one serving. If I were bringing a bar or brownie, I would cut the serving size in half, but still have enough that everyone could have 2 pieces. It I were bringing cookies, it would be enough for at least 2 each.

Ditto on take something that will feed all 43 people. If you don't want to make cookie dough, then think about those pre-made, pre-cut cookie dough packages. Each one usually has 12 cookies in them so get 4-6 of them and bake them up. Easy.

Ugh! When I signed up I had no idea that A) that many people were coming and B) that only two of us signed up for desserts. And to top it all off I'm coming down with something and the last thing I feel like doing is baking. I hear Costco makes pretty good desserts.  Thanks for your input.

Since it's a tailgate party, I would do more of a finger food type dessert as opposed to a cut and serve type. Easy to eat.
Personally, I would buy an assortment of cookies and stuff. That way there is a variety. Vanilla wafers Some sort of lemon? cream filled Chocolate chip Oreo's Oatmeal Rice krispie treats(cut into bite size pieces)
I'd pick up a large tray from the dollar, and make a cookie tray assortment.
