I really wish we enjoyed tomatoes, raw onion, lots of peppers. etc. So many options available! We know how healthy the Mediterranean diet is, but just don’t enjoy those flavors. But we are trying to retrain our palettes so I need to pick one of these recipes and try it! Throughout the year we have Grilled Chicken Spinach Salad w/ Fruit & Balsamic Vinegar Dressing several times a week. The chicken is grilled with seasoning, we like an even mix of sage/garlic/onion best, but anything like Italian spices will be great. We like pears and white peaches best but also use strawberries, oranges, blackberries. (Green app,es and blackberries or raspberries are amazing with a grilled steak salad). Whatever toasted nuts and seeds you like. Cranberries are a good addition. We think goat cheese adds a nice pop and the flavor goes well with our dressing, but feta and also parmesan work well. The dressing has dijon in it, which I think makes it richer. Basically, whatever we have an are in the mood for over 3 - 4 cups of fresh spinach. Does coleslaw count as a salad? Actually, I think that whole meal will be our cheat meal next week. Mmmm.

We drove past a Mrs. Gerry's plant in Albert Lea (our first stop in MN). I was wondering what they made and then I saw a selection in the deli section of the grocery store. The 3 Bean salad is really good. I think you should include some of that. Too funny! they make the best potato salad!! we had some on thursday!

My newest favorite is dill pickle salad. I made it for the first time last year for my son's covid graduation party. Recipe? SaladI use sharp cheddar for the cheese and double the batch.

I really like this one. Cucumber Yogurt Raita Salad It's kind of an inverse raita. So many great suggestions. I will also recommend Six Seasons: A New Way with Vegetables by Joshua McFadden. This is one of the handful of cookbooks that made the cut from house to RV. So many excellent and inventive dishes, many of my favorites are salads. Thank you for the book recommendation, we have come to like so many vegetables by learning to cook them properly. This looks perfect for that goal.

This southwest orzo salad from Carlsbad Cravings is my favorite. I take to lots of gatherings and it always gets rave reviews. I made it for our family gathering over the Memorial Day weekend and everyone loved it. I’ll be making it again for sure!
