I usually just buy something from the deli, because I don't plan ahead. Heck I have never made potato salad!! Mainly because my mom and dh's mom make the best. But I need to step up and start making my own salads. I have made the one with the spaghetti noodles, supreme salad mix, veggies and Italian dressing I think it is. Looking for some fun, easy salads, esp now with grilling season coming up! plan to make chix and shrimp kabobs over Memorial day and a good salad would be great!

Lately I've been making one based on Evergreens "Don't Be Sicily" salad that is easy to throw together: greens, diced or julienned sundried tomatoes, fresh mozzarella pearls, marinated mushrooms, garlic croutons, a plop of pesto on top and balsamic dressing.
Sometimes I throw in a few other vegetables if I feel like chopping, but that's the gist of it.

Merge’s Mom’s Macaroni Salad
Midwestern goodness she made up for my dad, who could not stand the usual sweet macaroni salads. Amounts are approximate because mom never used a recipe.
12 oz of elbow macaroni, cooked and cooled 1 cup each diced sharp cheddar cheese, diced tomato, diced celery, and diced green pepper. 1/2 cup chopped green onion Dressing made of about 1/2 cup of real mayonnaise (not miracle whip and not low fat), a squirt of mustard, a tablespoon of white vinegar, a teeny bit of sugar, and salt and pepper to taste.
Stir it all together. Best if made the night before so flavors can blend.
Merge’s Sour Cream Potato Salad
3 lbs red potatoes, cooked, cooled, and cut into bite size pieces. A bunch of green onions, chopped A pound of thick cut bacon, cooked crisp and chopped 1 cup sour cream and one cup real Mayo, mixed with salt and pepper to taste
Also better if made the night before

Ina Garten’s panzanella salad is the absolute best. We only make it with farmers market heirloom tomatoes. And I get a loaf of sourdough to make the croutons.
It’s summer in a bowl for us.

Grilled vegetable salad with feta: www.finecooking.com/recipe/grilled-vegetable-salad-with-fetaOr I do a peach and basil panzanella. Basically I cut crusty bread into 1-inch cubes, season with olive oil and whatever spices I feel like (like dried thyme, salt, a pinch of cayenne). I toast them in the oven. Then I cube heirloom tomatoes and peaches. I toss all three with some julienned fresh basil, crumbled French feta or ricotta salata, and a homemade balsamic vinaigrette.

- top with 1 TBSP oregano, 2-3 TBSP olive oil, 2-3 TBSP vinegar and toss
- serve with crumbled feta
You can adjust to your family's tastes. My family would be happy with an extra cucumber. We also like this chopped cauliflower salad. Cauliflower Corn Cucumber salad

I like this Asian Chicken Salad recipe from The Dinner Doctor cookbook:
What I love about this recipe is that the first night we have the rotisserie chicken like a normal meal and the second night I shred the rest of the chicken and make this salad with the leftovers. One chicken, two meals. I’m all over that!
ETA: I leave out the cilantro because it’s nasty.

I love a good green pea salad. It has peas, chopped boiled egg, kosher pickles, pimientos, cheddar cheese, purple onions, mayo and a dab of mustard, and any thing else you want to throw in. Its like potato salad, the amount of each ingredient is up to you.

I LOVE this potato salad!!! It's my "company's coming" potato salad, for sure. The method infuses sooo much delicious flavor into the potatoes, and the fresh herbs are divine.

Fun name for a cooking blog, eh? I make this too, call it Cowboy Caviar because that's what my friend who gave me the recipe a gazillion years ago called it. The farro salad sounds delicious. I love all things Mediterranean but can no longer eat dairy and have chosen not to eat meat. Just starting eating WFPB with low oil... I miss feta!!!

For WFPB friendly, I would do either a silken tofu or cashew based dressing. For a Tofu Mayo blend silken tofu, Dijon mustard, dill, garlic, salt, pepper and lemon juice together. Add a date or little maple syrup if you like it sweett. This is a great Cashew Mayo base that you can change the herbs & spices to suit what you are making.

Main Dish salads
BLT salad is a favourite here - lettuce, tomatoes, bacon, and a mayonnaise based dressing (3/4 cup mayo, 1/4 milk, 1 tp garlic powder)
Tuna pasta salad - super easy - cook up pasta (we like small shells or rotini but my mum used elbows) drain and marinate with italian dressing. When cold, add tuna(from the tin), diced onions, and mayonnaise
Cobb or Club salad is also a good main dish salad
Side dish salads
Caprese salad is one of my favourites - tomatoes, mozzarella balls, cucumbers, and basil with a balsamic vinaigrette

Can you please give me a rough idea of the ratio of silken tofu to lemon juice? Start with 2 TBSP lemon juice to 12 oz tofu and then go by taste preference/consistency. You can sub in a vinegar, but I like the lemon & dill combo for this salad.
