I saved some old threads from the two peas scrapping board and I'll try to post them as I remember and have time. So here's a condensed version of one thread I found helpful. Feel free to add other ideas.
-Cards -pictures from your younger years - top ten lists Top 10 jobs/careers you would love to have Top 10 places you want to travel to some day - mini books - pets - favourite places to go - lists of books I have read - about where I live - All About Me album -Me According To Others page 1. Phrases or words I use a lot: 2. Physical gestures I use frequently: 3. Something I've said or done that makes you laugh: 4. Something that comes easily to me? 5. Something that comes difficult to me? - Vision Board - pictures of flowers, the beach, sunsets or sunrises to scrap. -Ali Edwards One Little Word current favourites -goal setting and life planning -I would say just start writing some of your favorite childhood memories and then find a photo that is close to the age of your memory. -"Day in the life" pages

I'm with Kiki, though. I don't think I'll ever run out of things to scrap. I don't think I'll ever catch up.

Out of things to scrap? I can't imagine! Things I have scrapped about recently - Eating a Proper English Breakfast - My daughter being a grump about doing homework - Disney - Pumping gas (my old car had to be babysat, it took up to 20 min to fill my tank. My new car fills up like normal and it feels crazy fast) - Trip to San Francisco - Family Reunion
Things I could scrap about - Podcasts I love - TV shows I love - Clothes I am wearing/loving - Subscription boxes (Scrapbook kit subscriptions, Nerd block/loot crate ect) - Movies I have gone to see - Morning Routine - How I spend my weekends - Commute to work - Books I am reading/have read - Regular places I go - "How we met", pick a friend or significant other and tell the origin story. - High School memories (Going to the mall: Who took you? what did you do there? Before cell phones we had a designated time/place or we had to use the pay phone). What clubs/extra curricular activities did you participate in? School dances, where did you hang out and with who and what did you do? HOURS spend on the phone, and the fun we had when we discovered 3-way calling. Teen obsessions [mine was The X-Files].)

i got an idea on youtube about scrapping a "story album" the focus would be more on the story than events. That's my plan as i'm almost "out" also

If I ever got to a place where I was totally finished with everything I would want to scrap, I would go back and redo some pages, and I would probably scrap for others.

I've just started keeping a prompt/list-type-of-page in the back of my planner for those times I get stuck thinking of ideas for pages. It works pretty well for me - I've already used it a few times when I've wanted to scrap but just can't decide on a topic.

This is a problem for me at times also. One of my favorite albums I started because I was "out of photos" is "Things I want to tell you". It is for my family and just has random stuff that I want them to know with photos that I like. Some of them I steal from the internet. Most things I have told them but don't think they were very interested and will probably forget. Another one I enjoy is photos throughout the years of me and dh and one of just photos of dh. (He is very photogenic) I also like to just find random photos that I like reprint them and "rescrap" them. I have a album for them.

This has so far never happened to me, but I have a running list of things to someday scrapbook if I ever run out of ideas. I also like searching Pinterest for challenges and prompts. Sometimes a simple question on a prompt list is just what I need to get going.
