I've got an Italian cooking class tonight and we're learning how to make Scicilian spaghetti and meatballs, penne pasta with mushrooms and basil sauce & puff pastry Nutella bites. So that's what I'm having for dinner. I love cooking classes, watching the chef make you this great meal while she chats with you and explains why she's doing what she is. I've gotten some of my best recipes at cooking classes.
Anyway, how about you? What are you planning for dinner?

I refuse to go to the store today, but I have potatoes, cheese, bacon, and broccoli on hand, so I'm thinking baked stuffed potatoes. It's just me and the kids tonight. No sour cream, but I have some plain greek yogurt. I'm a happy girl Kathy, your dinner sounds so good!

My husband is still out of town for work and cooking for myself isn't fun so I am going to my favorite taco shop with my best friend for girl talk and rolled tacos.

Yum Kathy, that sounds delicious.
Tonight I'm using up leftover sticky rice from last night's dinner. Planning to brown some chicken & basil sausage, mix with the rice and throw in some beans and bake in the oven, and, while the oven is on, I might as well roast some brussel sprouts

akathy you are making me want to check out local cooking classes - I haven't taken one in years, but always loved them. I'm making Ginger Carrot soup tonight, along with pork chops for my family of carnivores. I usually grill pork chops, but am trolling the internet for a baked pork chop recipe to jump out at me.

All of these sound really good, I think I am hungry!
Sandwiches from Sprouts.
These are seriously underrated. For $2.99, you can get a sandwich jam-packed with meat, onion, tomato, lettuce, cucumbers, green pepper... I think I am forgetting something. I usually get the veggie sandwich, and instead of the meat, I get cheese and avocado. Way, way better than Subway for a fraction of the price.
Their deli meat is delicious, and if you want extras - bacon, avocado or cheese, it's only an extra 50 cents.
Love Sprout's sandwiches. Their chicken salad is also delicious.

Hamburger, macaroni, tomato, and cheese casserole.
I was going to go out and get bakery bread to go with it but DH said that was a crazy thought in this weather.
So maybe I will make tea biscuits.

I picked up a rotisserie chicken from Sam's club today, so we are having that. Not sure what I'm doing sides wise yet though. DH is working late, so I could get away with tater tots lol.

I'm making Korean beef (I think that's a recipe I found here!) with mini egg rolls (those are premade from Market Day), honey ginger carrots and something green (maybe green beans).

I just got home from Sprouts & had no idea they made sandwiches there. We are having broccoli & cheddar stuffed pork chops, asparagus, and salad for dinner.

Tostada salad bowls! Dd will just have the fillings as the bowls aren't gf. There will be the tostada bowls, ground turkey, cheese, black olive, tomatoes, lettuce, salsa, chipotle ranch, corn, green onion.
Might serve some fresh strawberries too. Got to love California. Still enjoying Ca grown strawberries!

Subway. It's been a stressful day. Schools were on lockdown this morning, there was a suspect police were looking for in the area. Then we had a 1.5 hour orthodontist appt for dd. While we were at the appt, I texted my older son to see if he had made it home, found out his bus was in an accident. Everyone was okay, but he ended up getting home At 445. I decided take out was in order!

We're going to my friend's Mexican restaurant. Tomorrow the last guest leaves (my sister, wahhh) and she likes to have Mexican food as often as possible when she's here. Connecticut = not wonderful Mexican food.

Leftovers (I made pulled pork a few days ago) or frozen pizza here. Kitchen will be in disarray for a looooong time, so I think this will be common. I'd better stop posting it before I get labelled as one of 'those' mothers . . .

Turkey meatballs, rice, mushroom gravy, steamed green beans and fresh hot from the oven homemade french bread ( can you which part I am happy about LOL). My husband "signateered" us( me) up to feed our churches missionaries tonight . This was on the menu anyway this week and feeds a crowd so I made it tonight. Good comfort food for a day with a wind chill advisory in FL!

Thai Portabello Wraps from the "Forks over Knives" cookbook, but instead of making them into wraps I'm serving the dish over jasmine rice. I just love Thai food!
