Becki's Almost As Good as the UP Monks Almond Cookies 2 sticks of butter. 1 cup brown sugar 1 egg 1 1/4 t almond extract 1/2 t salt 1 heaping teaspoon baking powder 2 cups flour 1 small bag of sliced almonds Microwave the sticks of butter 20 seconds until nearly melted and then whip with the brown sugar. Add egg and almond extract. Beat in the dry ingredients and then chil in the fridge for an hour. Heat oven to 350 convection. Roll the dough in balls and then dip the tops in sliced almonds. Bake for 14 minutes. So soft and delicious.

Becki's Oatmeal Chocolate Chip Cookies 2 sticks butter 3/4 c brown sugar 1/2 c white sugar 2 eggs 1 t vanilla 1 t cinnamon 1 t baking powder 1/2 t baking soda 1 1/2 c oatmeal 1 3/4 c flour 2 cups chocolate chips Bake at 375 convection for 12 minutes. Please eat these warm...super yummy!

Becki's Coconut Pecan Chip Cookies 2 sticks of salted butter 1 c of brown sugar 1t vanilla 1 egg 1/2 t baking soda 1/2 t baking powder 2 c flour 2 c sweetened coconut 1 1/2 c chopped pecans 2 c chocolate chips Bake at 375 convection for 9-10 minutes depending on how done you like them.

The Unicorn chips have been discontinued. I also use funfetti chips in these cookies and they work perfect.

Glazed Cream Cheese Cookies 1 stick of butter 4 oz cream cheese 1 1/4 c powdered sugar 1 egg 1/2 t vanilla 3/4 t baking powder 2 cups flour Roll into balls. Bake at 350 convection for 12 minutes When cookies are cool, dip tops in a glaze of powdered sugar, vanilla (just a touch) and milk

jeremysgirl very kindly shared the Laura Bush Cowboy Cookies recipe with me earlier this summer Here is part of my first batch. They were delicious and have become a firm favourite this side of the pond.
