Last night's curry recipe was fabulous but very, very hot. I'll make it again except I'll use thinly sliced chicken instead of cubed, a lot more of it and only 3 Tablespoons of Panang curry. Tonight my grandson invited me to his friend birthday party.  It's at the bowling alley and pizza is on the menu. So that will be my dinner tonight. What are you having?

Butter chicken, rice and naan bread on the menu here tonight. I always make a mildish curry, then DH can add as many chili flakes to suit his taste, and not burn everyone else's taste buds

If dh is home tonight we're having butternut squash soup and 30 minute dinner rolls, but there's a chance he'll be out, in which case, it's going to be kids choice.

Baked potatoes with the following toppings: chili, shredded cheese, black olives, green onions, slasa, corn tortilla chips. Serving roasted corn and cinnamon brown sugar pineapple on the side.

I'm heating up some chili from the freezer. Served with tortilla chips, cheese, sour cream, and avocados.
DH has been working really long hours this week, so I know he won't want to go out (which would be my choice having been working at home all week.)

I am making oven roasted sausage and potatoes. I found a new type of chicken sausage which is really yummy (I like it much better than regular sausage) and has only 1.5 grams of fat per serving!

We're going out tonight to our favorite local Italian restaurant with dear friends. We used to hang out with them virtually every weekend, but life has intervened lately with too much busyness for all of us. So we are really looking forward to getting together to catch up a little.

My daughter and I are headed into Anchorage after school today to shop for a dress for the Nutcracker Ballet. We will be having a girlie dinner out somewhere. I love nights like these!

Kathy, I read the recipe yesterday, and wondered where one gets keffir lime leaves. Did you use them? Where do you get them? No, I didn't find any here so I just put some fresh lime zest in. I didn't find Thai basil either and used just plain basil. It was still good.

I made Skinnytaste's maple Dijon chicken drumsticks in the crockpot. They were really terrific. With roasted green beans and acorn squash.

I made a soup using the Ro-Tel that I bought in the USA this weekend  My soup consisted of 3 cans of Ro-Tel, chicken stock, diced onion, diced peppers, a few cloves of minced garlic, a can of rinsed black beans, 3 chicken breasts (pre-cooked and chopped), and a cup of orzo ... it was yummy
