I posted about a year ago about wanting to get a smoker & the peas almost unanimously advised me to get a charcoal/wood smoker, not electric or gas. Well, I finally just bought one. Now what?
Could you please direct me to your favorite recipes or websights? I'm a little worried with the amount of babysitting it will take & I want some yummy food this weekend from it. I bought the smoker, hardwood lump charcoal, hickory wood chips & a handheld chimney fire starter thingy (looks like a metal coffee pot with a handle & holes in the bottom.)
Is there anything else I need? Do you use rubs or marinate your meat before you smoke it. Any tips for a smoker virgin? What is your favorite thing to smoke? TIA!

I just asked my hubby he uses the web site virtual weber bullet. Good luck. I am hoping hubby will smoke a turkey this weekend. We have tried many of the recipes on this site as well as the cookbook low and slow. We have yet to have a fail from it.

Green Mountain Grill RecipesHi! We have a Green Mountain Smoker/Grill and have tried so many of their recipes since buying in April! Slow and low is key...absolutely everything has been delicious. I was opposed to the pellet/electric concept at first, but now can't say enough good things about it. So I'm sure your charcoal/wood will be even better! Good luck and let us know what you decide to try!

We smoke a turkey every year for Thanksgiving. Brined over night and slapped on the grill for a couple of hours and it is the most wonderful thing you have every had.

Okay, a few tips: When I first got it, I only used the chimney when I wanted a really hot fire. Without it, you could be waiting forever for your grill to hit the desired temp (if ever). I now use it for lower temps too - put more charcoal in the base of your smoker and less in the chimney. The other thing you really need to purchase is a meat thermometer. Cannot stress this enough - measuring doneness by time alone will guarantee disaster. Low and slow is best for most smoking, steaks are best at REALLY high temps for a short time. Understand the difference between direct and indirect heat. If you are doing a cut like a brisket, give yourself a LOT of extra time. Brisket has a habit of 'stalling' at a certain temperature which means your thermometer might not move for hours. Experiment with different woods. Different meats taste better with different smoke and a lot of it is personal preference. If you are doing a long smoke, try chunks rather than chips. Along with that, experiment with different rubs, marinades and sauces. Use google and, when you find one you like, for all that is good and holy, bookmark it. I can't tell you how many great recipes I lost. Where would I start? Probably a 3-2-1 ribs. That's 3 hours smoked, 2 hours in foil and 1 hour unfoiled in sauce. Again, google it.

We have an electric Green Mountain smoker and it's AWESOME!! We've made delicious beer butt chicken, pork roasts, pork ribs, chicken quarters, beef arm roast, hamburgers. I have a Pinboard I started for my hubby to pin recipes on it. We also bought the recipe for the pork rub from one of the pins, it is FANTASTIC!! It says it's for ribs but we used it on a pork roast and a beef roast...sooo good! This is the board for the recipe you can buy for like $3 This is the board with times, temps and recipes for marinades, etc ENJOY!

Thanks everyone! I'm getting excited! We bought THIS ONE. I forgot I do have a meat thermometer also. Dh is super paranoid about thoroughly cooking meat, lol.
