I’m going to Costco today and am wondering if I buy pumpkin pie today will it still be ok on Thursday , or if I should wait.

It will be fine as long as you keep it refrigerated. I’ll admit, I opened this based on your typo in the subject. I was going to reply, it’s never too EASY to buy yummy pie!

I'm assuming you meant "early" in the title, not "easy"... .Although I was prepared to answer the "easy" question, thinking maybe you meant "are we getting lazy because it's too easy to buy a good pie". I was going to reply "thank goodness for pre-made pies!" hahahahaha Anyway... as for being too early, if you could fit a Costco pie in your refrigerator I'd think it would be okay. It won't fit in ours though so I'm heading there first thing Wednesday morning. I plan to pull into the parking lot half an hour before they open. I'll get my favorite spot (the one that points directly to the exit, lol) and read a book until they open. Then I'll go straight to the pies, get what I want, grab anything else that I've thought of (which won't be much), then go directly to the self-checkout. I'll be back to my car and out of the lot in 20 minutes.

I'm waiting until Tuesday to buy my Costco pumpkin pie (which is an AMAZING pumpkin pie.) IIRC, I went through this last year and it's about 5 days that it lasts, so I think you should be fine.

I’m sure it will be ok - but I would wait until Tuesday. Or buy a premed crust and make it yourself Wednesday- pumpkin pie is the easiest! (but I totally get it if you don’t want to lol)

We have bought early and then found mold on them by Thanksgiving. I wouldn’t buy until Tuesday.

We've purchased Costco pies on the Sunday before Thanksgiving and they've been fine. As mentioned above, refrigerate them to make them last. We are having a small Thanksgiving this year, so I picked up two small pies yesterday. I put them in the freezer. We'll see how that goes!

if you're concerned, you can freeze shop-bought pies - I didn't realise that until last year when I was looking at pies about a week or so before Christmas and the bakery guy who was stocking them suggested that if I wanted them, I should buy now and freeze because they expected to run out (and when I went back closer to Christmas- he had been right). They tasted fine defrosted (mine were from Publix - pumpkin, pecan, and apple)

Oh yum! I love pumpkin pie and the ones from Costco are the best. I would trust their dates and buy if they say use by the day after or so.

It would definitely be too early to buy a pumpkin pie in my house. By Thanksgiving, there would be nothing left but crumbs! I love pumpkin pie and could easily eat a piece every single day.

I was going to suggest freezing it too. Pumpkin pie freezes very well. One of my brothers grows pumpkins in his yard and then makes about a half dozen pies and freezes them to thaw out and have later.

Funny, I just asked a friend today bc my mom gave me a pumpkin pie, I assume she baked it yesterday, for Thanksgiving. It's in my fridge now, but I'm not sure how good it will be by Thurs. Online articles seem to say 4 days in the fridge. If they are store pies, they have preservatives and then they last longer.

I'm sure Costco includes a date on it. I've often been amazed at how long store bought pies last even at room temperature, so you really can't compare to how long a homemade pie will sit out.
