I bought a prime rib roast from Costco yesterday. We just got the whole one that is vac sealed (and like $200 😳😳). I had to get it yesterday as we’re an hour away from Costco and between not having time and worry about them selling out I just went for it.
Here’s the question: the sell by date is 12/22. We plan to cook/eat it on Christmas, 3 days after the sell by. Google says it’s fine but Google has nothing on pea knowledge…..is it safe in the fridge or should I toss it in the deep freeze for a few days?
Ps: I also bought the Shake vac while I was there…..thanks for the recommendations! 😁

I would freeze it and pull it out to thaw however many days for the weight. Maybe Wednesday or Thursday?

With a sell by date of 12/22, I think I’d just leave it sealed in the shrink wrap, in the lowest coldest part of the fridge. If it was fully frozen, it would probably take a couple full days to thaw back out.

I would unwrap and take the opportunity to dry age it. Definitely make sure your fridge is set to be very cold, though.

I would leave it in the wrapper and in a refrigerator.
If you freeze it, about the time it freezes it would be time to thaw it for cooking.
SELL BY date is not the USE BY date or the EAT BY date.....that date does not bother me at all.

It's not going to go bad. Don't freeze it, by the time it's frozen it will be time to thaw it again.

I would just keep it cold in the fridge. Those vac-wrapped meats keep forever. And in any case, it’s supposed to still be good for several days after the sell by date.

Put it in the fridge. All of our meat from the US (and sold in the commissary) comes over here vacuum packed. It's good for several days after the sell by date. Vacuum packed meat is different and it lasts longer than fresh meat in plastic wrap. Plus, it's beef. USDA Sell by dateYou can tell when vacuum packed meat starts to turn, as it will produce gas and the package will begin to inflate. I never use vacuum packed meat when the package begins to inflate, regardless of the date.

Keep well refrigerated.
Beef can keep for a very long time when vac sealed. Our beef we raise is marketed to the European market. It is processed in Omaha then shipped abroad. It is never frozen.
Any beef we butcher for our own freezer, we have the locker hang in a cooler for 3 weeks.
Freezing will deteriorate the quality of your beef. Especially since you would be freezing it in a home freezer, which is a slow process. The cell walls will rupture. Since you have a nicer cut of beef, you don't want to freeze it and reduce the quality of that. Commercially frozen beef is put in a 'sharp freeze' which freezes it very quickly. Even at that, fresh, never frozen is what you want!
If you have any issues when you open it - give it a quick rinse and pat off. But it will be just fine.

Silly question, but are you sure the sell by date is 12/22? I just bought a vacuum packed roast for Christmas from Costco on Friday and the date on mine says 1/8. They usually have really long shelf life dates so I’m surprised yours has such a short one.

🤣 I really thought there’d be some common answers here but so far I’m at least as stumped as when I posted 🤣 you are not alone! i am buying our rib today and cooking it saturday. i was thinking of freezing it overnight and pulling it back out to do a slow defrost in the fridge. that way it will stay colder than just fridge state i bought it in but start to come out of the frozen state until i need it on saturday.

I'm confused as to why they would put a "sell by" date but not a "best before" or "use by" date on it. Is that common? I've never seen "sell by" dates on anything. Thanks for your input iowgirl!

Most of the dates here are "sell by" dates.
I would not freeze that piece of meat, especially since it's vac sealed. But even if it wasn't, I still wouldn't.

i forgot to add on my first post that my butcher said that a 10lb+ roast is fine in the fridge for a week because it was dense enough to stay really cold. i had also gotten a last 5lb roast and he said to freeze that until a few days before and then thaw in fridge.
