It’s that time of year when I want alllll of the soup and bread. Last weekend we had this delicious chili (the recipe called for turkey thighs but I subbed chicken thighs bc that’s what the grocery stores carry around here). The chipotle/adobo flavor is what really makes this one come alive, at least for me). Just made this yummy Sausage and Tortellini soup last night. It uses Trader Joe's Holiday Hash (chopped butternut squash, onions, seasonings) and fully cooked chicken sausage so it came together quickly. Kale and sausage tortellini soup, although tortellini has been hit or miss if I'm able to find it... I sub vegetable stock for the chicken stock and leave out the sausage... Tortilla soup, with a recipe I found googling vegetarian tortilla soup. Pioneer Woman hamburger soup, most of the time using vegetarian ground beef crumbles instead of ground beef. I have a vegetarian teenager, and don't want to cook two separate dinners, these have been hits with the entire family even without meat in them. ETA: the recipes. tortellinitortillahamburger

I made a big batch of salmon chowder - OMG so good. I make it a couple times every winter. And not a soup per se, but still winter comfort food - I just made a chicken pot pie with herbed crust. Perfect on these cold Canadian days.

Last week when it was in the 20s here, I made myself a pot of chili. I make it very similar to Wendy’s. Next week or so, I will make cabbage, ( I use a whole head ) ground beef, potatoes, green bean, tomatoes soup. Freezing a large portion of each.

Potato-broccoli is my current favorite. I avoid cream, so I put some potatoes and broccoli stems in IP to steam to blendable consistency and use that as a thickener. I think chili will be on this weekend, temps continue to drop to coldest in a while.

I make this recipe every week during the cold months. It's one of my favorites as it uses kitchen staples and you can alter easily based on the vegetables on hand. It tastes even better the next day after the flavors have had time to marry. I like serving with corn bread.
Vegan Black Bean Stew
1 onion, diced 3-5 bell peppers, diced 4 garlic cloves, minced 3 Tablespoons Penzeys Taco seasoning (or 1 taco seasoning packet) 28oz can crushed tomatoes with basil 10oz can diced green chiles 2x 14oz can black beans, drained and rinsed 1 carton (4 quarts) vegetable broth 1 pouch frozen brown rice, cooked in the microwave 10oz bag frozen corn kernels 1/2 teaspoon salt 1/2 teaspoon pepper 1/4 teaspoon red pepper flakes pinch of sugar
1. In a large stock pot, sauté onion, bell pepper and garlic until soft (about 7-10 minutes). Splash with vegetable stock if vegetables begin to stick. Add taco seasoning, sugar, salt, pepper and red pepper flakes. Stir until combined, about 30 seconds.
2. Add crushed tomatoes, diced green chiles, black beans, cooked brown rice, frozen corn kernels and vegetable broth. Bring back to medium heat until it starts to boil, then drop temperature to low and simmer for 20 minutes.

Well... I recently opened a container of the Costco New England clam chowder. And, then a few days later we had the Costco chicken tortilla soup. And, it comes in a 2-pack, and one container is plenty for me and dh. So now I have one container of each soup up in the freezer. I hate to cook. And I love Costco.

And the 12yo liked it, too. www.tasteofhome.com/recipes/southwestern-pork-and-squash-soup/I’ve also been making a very basic tortellini soup, using three-cheese tortellini, chicken sausage, and spinach in chicken broth. Soooo good on a cold night, and super quick and easy. I brown the sausage (even if it’s already cooked), add the broth, bring it to a boil, add the tortellini, let it cook through, then add fresh or frozen spinach and seasonings to taste for the last few minutes. I also make bean or split pea soups this time of year. If you don’t have any ham, you can use sausage or bacon instead. I actually prefer split pea soup made with leftover corned beef. Save your cooking water (strained first) to use as a soup base, and don’t add any additional salt. Basically, any leftover diced meat, with any vegetable mix of choice, and some starchy thing (potatoes, noodles, barley, whatever), cooked in beef or chicken stock, or vegetable stock if you prefer, seasoned as desired and thickened or not, makes a fantastic pot of soup.

My husband made salmon stew over the weekend. I pulled some lima bean and ham soup out of the freezer for last night and made cornbread in a cast iron pan to go with it.
I've been mulling over recipes for some hearty soup to make this weekend. We're forecasted for very rare snow here -- good soup weather!

I made chili over the weekend, chicken stew last night and cauliflower cheese soup is on the menu for tomorrow. Italian wedding next week for sure and haven't thought beyond that.
ETA: I forgot that DH made posole last week too.
We also have a vegetarian so I usually substitute Impossible meat for her. For the chicken stew, the rest of us get chicken but she gets a chicken substitute.

I think what constitutes 'soup' is different in the UK from the US. I wouldn't call chilli a soup, nor stew.
My 'Christmas soup' is parsnips, onions, stock, thyme, sage and salt. Cook until the veg is soft then blend to a beautiful thick, creamy consistency.
Mushroom, onion and zucchini, blended with paprika and salt until creamy and served in a big mug to be enjoyed with mittens by the fire pit.
I love anything pumpkin/butternut squash, so pumpkin with ginger, or paprika, or onion and mushroom. Mmm.
My favourite soup is 'bottom of the fridge soup' which is basically anything that needs using up, seasoned with whatever I feel like. Always different, never possible to reproduce and always good.

I made chicken sausage, spinach and chickpea soup last night. I got the recipe from Hello Fresh when I used them for a couple of weeks last year. Kept the recipe card and tweaked it a bit. Best part is we're having it again tonight so I don't have to cook!

So I cubes the scones and made croutons with those. Life changing, I tell you!

I like making this in winter, but I add seasoning. (Ol girl has almost no spices in this! I am not a big soup fan but dh really likes it and funny enough, he insists that some of my best meals are my soups so go figure. His newest favourite is Broccoli Cheese and I must admit, I quite like it as well. His favourites also include Roasted Butternut Squash Soup, Chicken Soup and Beef and Balsamic Soup.
