Well... I recently opened a container of the Costco New England clam chowder. And, then a few days later we had the Costco chicken tortilla soup. And, it comes in a 2-pack, and one container is plenty for me and dh. So now I have one container of each soup up in the freezer. I hate to cook. And I love Costco. I’ve been eating the Costco lentil soups lately, plus Panera chicken tortilla. I have a container of the local grocery store bean and ham in the fridge now. I’m all about convenience.

I think what constitutes 'soup' is different in the UK from the US. I wouldn't call chilli a soup, nor stew. My 'Christmas soup' is parsnips, onions, stock, thyme, sage and salt. Cook until the veg is soft then blend to a beautiful thick, creamy consistency. Mushroom, onion and zucchini, blended with paprika and salt until creamy and served in a big mug to be enjoyed with mittens by the fire pit. I love anything pumpkin/butternut squash, so pumpkin with ginger, or paprika, or onion and mushroom. Mmm. My favourite soup is 'bottom of the fridge soup' which is basically anything that needs using up, seasoned with whatever I feel like. Always different, never possible to reproduce and always good. I wouldnt call chili soup or stew either. Chili is...chili I have made a potato and ham chowder that is the top soup recipe on allrecipes - and it deserves to be there! And I made pasta e fagioli last weekend.

Beef Barley Soup (made with hamburger not stew meat). So thick, it sticks to your ribs! With homemade bread.

I love soup season. Some of our favorites are potato leek, baked potato, chicken noodle, beef barley, and chicken and dumplings. All four are soup season, just sayin'. Love soup!

Loaded backed potato soup, corn chowder, creamy wild rice. I’m going to make split pea soon. We make chili to but don’t consider that soup. I forgot I made leak soup a few months ago

We are on vaca for a few days so I packed a cooler with heat and eat Costco foods. We had crab corn chowder and I'm not a fan. The alcohol taste was way too overpowering for me. My dad and DD had tortilla soup and loved it. I also got broccoli cheese but we didn't get around to eating it. Guess we'll enjoy it at home. I'm eager to try the clam chowder and maybe lobster bisque. Is the bisque strongly flavored with alcohol?
As for homemade, my Minestrone is probably my very fave. I recently found a crock pot Frito pie recipe that DH loved. I also make a great lasagne soup. Oh, and we recently did a new sausage and tortellini soup that my parents and I loved.
Winter is for soup at our house!

One of our favourites is this super-easy, only 7 ingredients Italian Wedding Soup. I do not make my own little tiny meatballs, but buy the really good frozen ones. I semi-thaw about 18 of them and cut them into eighths. Bring 2 cartons of chicken stock to a boil, then turn down. Add the little 'meatballs', some black pepper, two chopped up green onions, two chicken bouillon cubes, half a package of frozen spinach and 5-6 spoonsful of acini de pepe pasta. Bring it all back to almost boiling, then turn down again. Cover and let simmer for about an hour or until the pasta swells. My DH doesn't like parmesan cheese, so I don't add it into the pot of soup itself. I may put some on mine, though, but it's not really a necessity to me.

I made this garlic chickpea soup last week and it was amazing! I actually added onions (cause why not) and did it in the instant pot. So easy and so good!

I'm a long time subscriber to America's Test Kitchen and I get most of my soup recipes from them. My recent makes from them are Chicken Noodle, Tomato, and Black Bean.
From PW Loaded Baked Potato.
From my own creation Beef Stew. (I agree it's not really a soup)

I got this recipe on a soup thread last year : pinchofyum.com/lemon-chicken-soup-with-orzoIt’s lemon chicken orzo. My family loves it. We keep kosher and can’t mix dairy with meat and this works. I made it last night. I’ve also made it vegetarian with 2 tins of chick peas (1 whole and 1 puréed) instead of the chicken and it was also delicious. I can adjust it so much and it’s always good. usually I put a cut up cauliflower instead of the potatoes. I sometimes put down brown lentils too. Sometimes I leave out the tomatoes. It’s always good. I love this : www.epicurious.com/recipes/food/views/curried-lentil-soup-362489/amp Curry lentil soup recipe. It’s different in that it uses French lentils which I love. You also make a version of hummus and melt it into the soup. It’s soooo good. If I don’t have any of my own homemade hummus on hand I’ll use bought hummus. I’ve made it as is too (with their hummus type recipe) also good. I make all of these soups in my instant pot and just adjust the recipes. Usually less stock. Add more after if needed. I make soup at least 2 times per week. If my soups are too thin I add some parm cheese. Makes the soups so tasty. A childhood favorite—I loved Campbell’s Cream of Mushroom soup as a kid and growing up—the ultimate comfort food.
Then a few years ago, I made up a recipe that is so freaking good that I don’t buy Campbell’s at all! I just make my own. It’s simple and is done in 30 minutes.

We are big soup eaters in my house. I make soup at least once a week in the winter. I just made a huge pot of veggie soup on Friday, and I will freeze the leftovers in individual portions for lunches. For veggie soup, I make a base of chopped carrots, onions and celery sauteed for a bit in butter and garlic. I cook some kind of beef--whatever I have on hand or is on sale--ground beef, stew meat, sometimes even a roast that I cook and then shred. I use a mixture of beef broth and V8 juice, salt, pepper and thyme, simmer all that together. Then, I make a bunch of different veggies since everyone likes different things, so each person can add what they want. I usually have corn, lima beans and potatoes. This weeks version had sweet potatoes since I had some I needed to use up. I also sometimes cook turnips and even cauliflower. We have a soup bar. LOL
A new soup I have been making is cauliflower. It's so easy--I rough chop an onion and some carrots, throw in some garlic cloves whole, saute that a bit. Add vegetable broth, salt and pepper, and a chopped head of cauliflower. I simmer that until the cauliflower is soft, then I puree it with my immersion blender. It is very creamy, but there is no cream or cheese in it. Sometimes, I cook some bacon and crumble that on top along with some cheddar cheese, but it's good on it's on, especially with a grilled cheese to dip in it.
