Does anyone else get so excited to get the seasonal catalog in the mail like I do? What do you think of the recipes in it this month? That Pizza Babka looks amazing, I think I'm going to make it for SuperBowl (go Rams !) then on the flip side are these amazing Caramel Banana Walnut muffins. Those look divine as well, but it calls for 1 cup of White Whole Wheat Flour which I don't have and I don't feel like buying a whole new flour for just one recipe. They are always doing that, to make you buy more product lol. I don't blame them but I'm wondering how much that would really even make a difference in the recipe if I just used AP flour for the whole recipe. Here are the two recipes if anyone is interested. I am an AP gal. Unbleached AP. I would just make it with what I have.
I have gone boujee and bought 0000 italian flour to make pizza dough. Guess what. No one could tell any difference than what I regularly make. So, that cemented my thoughts on just using regular old AP. LOL

I actually have their white whole wheat flour on hand at the moment! My grocery store usually has it, along with their white and whole wheat flours. I'll bet if you look on the KA Flour site, they'll have an article about how to sub white flour for the white whole wheat flour. You could also call their hotline. I love King Arthur. I love getting their catalog. I have their containers and love that their air tight for my flour and powdered sugar. I had those OX pop up containers and they weren’t air tight. Their buttermilk pancake mix is to die for. It’s delicious.

The whole catalog is so gorgeous, I always want to bake all the things! I love their catalog and products. Go ahead and make the muffins with all AP flour — they will be fine. I’ve regularly substituted white whole wheat for ap and the other way around without issue.

LOL I think there is a huge diffference in pizza dough with 0000 flour vs AP - so I’m suprised no one could tell. In my experience the 0000 flour makes a much lighter and crispier crust. I generally use half ap and half 0000 for my pizza crust — the ap makes it a little sturdier while the 0000 makes it lightens it up

Yum...looks good. I don't always look at the recipes, but sometimes something catches my eye. I was obsessed with their magazine Sift and was really sad to see it end. I sometimes find old copies in our library sale and always get them. I think I accidentally even bought some repeats! I refer to them all the time for ideas.
I still have the cinnamon star bread and marble rye on my list to try. I wanted to do at holidays, but just didn't have space for it!

They are always doing that, to make you buy more product lol. Don't forget about having to buy the special size/shape pan for the one recipe either! That babka recipe calls for a 12x4 inch pan instead of a standard loaf pan.

I think it also makes the dough a lot silkier and easier to knead. Every time we go to the big Italian market which imports it, my husband asks "do we have enough of the good flour?" Anyway, re. the muffins, I would be less particular than the pizza dough and I would also use the regular flour without thinking twice!

As for their merchandise I swear I want it all, but they are priced so much higher on their website than Amazon. I like to support them though so I will only buy KA flour.

I live 45 minutes away from their place. We did a pie baking class and it was amazing! We were signed up for a family pizza one but Covid cancelled it. We stop whenever we are headed in that direction. The last time we went they had an flour on sale so I have bags of flour piled up in my pantry. I love their brownie mixes! At their place you can order food, they make great sandwiches, and I never leave without a brownie. I always buy the mixes that are on sale. I have a lot and should probably do some baking!

I am lucky to be in a place that I can afford to support smaller companies whose values I endorse. KAB is an employee owned legit do-great things company. I'm giving my business to them and not Bezos any more. Seriously, happy to send you some white whole wheat flour if you want to try that recipe with it. Otherwise, I routinely sub AP flour for it, or white wheat for the AP in cookie and muffin recipes.

I live about 1 hour and 20 minutes north of Norwich and also love stopping when I am close by. I would recommend stopping in if ever close by. I have never taken a class there but it is a doable bucket list item that I really need to look into.

It was interesting to watch cheese being made but the best part was shopping for cheese and ice cream cones! I love places like that, so interesting!

I do agree about supporting an EO business rather than Mr Bezos. I kind of used Amazon as a catch all term for any online business but I do admit I do shop there more than I'd like. I just hate to buy a full bag of the white ww flour when I know I won't use it all, it seems like such a waste and it'll wind up taking space in my already crammed freezer lol. I'll just make the recipe with the AP flour.
