I'm stuck.. I've looked at pinterest! I need some ideas.. the Peas are great at recipes. Ideas greatly appreciated. I"m looking for a green salad (lettuce based) with a great dressing. No Jello Need apply! My first thread on the new board... I feel so proud! (tear)

First of all, WELCOME and CONGRATULATIONS on your first post!! Wee hoo!!
I found a "Green Goddess Salad" recipe on Pinterest and made it to go along with our Easter dinner. It was quite yummy!!! I found the pea shoots at Trader Joe's. Enjoy!!
INGREDIENTS
Salad Ingredients
4 cups spinach
1-2 cups pea shoots
½ cup feta cheese
½ cup almonds, crushed or chopped
1 avocado, cut into chunks
Green Goddess Dressing
½ jalapeño pepper (I left the ribs and seeds - it was spicy and delicious)
⅔ cup Greek yogurt
Juice from 1 lime
¼ cup olive oil
½ teaspoon salt
1 tablespoon agave nectar
½ teaspoon minced garlic
½ cup packed cilantro
2 scallions
INSTRUCTIONS
Puree all the dressing ingredients together, adding the cilantro last and stopping when the texture feels right to you. I went for little green flecks of cilantro and scallion throughout.
Toss the salad ingredients together with dressing; serve immediately.

An awesome salad that I have been eating a lot of lately is: Spinach (I don't use lettuce.) Sliced strawberries Swiss cheese Peppered turkey Topped with a Sahale salad topper of parmesan almonds. (I buy it at walmart and it's delicious! ) Raspberry vinaigrette dressing

Butter lettuce Avocado Grapefruit (I cut into segments) Slivered almonds
Vinaigrette: 1 large clove of garlic, minced 1/8 tsp salt 1-2 tablespoons balsamic vinegar 2 tablespoons grapefruit juice (I buy an extra to juice), add more to taste if you like 1 tsp Dijon mustard 2 dashes Worcestershire sauce 2 tablespoons olive oil Fresh ground black pepper to taste

I like to make a balsamic vinegrette with strawberries and pecans. I use romaine lettuce as that is what we usually buy.
DS likes to make a raspberry vinegrette too.

I love to do spring mix with crasins, chopped apples, slivered almonds, and feta. I usually use a honey mustard vinaigrette with it, but any vinaigrette works well.

We've been enjoying Southwest Salad lately...
Greens (mix of Romaine and baby spinach is great!) Green onions Cubed avocado Sauteed red pepper Grilled corn, cut off the cob Cherry tomatoes or cubed tomato You can add black beans or grilled chicken if it needs to be a main/heartier dish.
Dressing: Sour cream/ buttermilk Pepper Juice of one lime Sauce from can of chipotles in adobo sauce
Use Sante Fe tortilla strips instead of croutons.

Loving all these ideas. I plan on making salads part of my lunch rotation at my new job. It's a nut free facility though. My mom adores craisins, I might have to grab a bag to add to my stash of mix ins. Ashley, your salad sounds scrumptious! We do a similar one with taco flavoured ground beef added in during the summer but I think I'm going to try yours this weekend!

Yes please English Pea Salad Drain the following: 1 can shoepeg corn (you can use white or yellow if you can't find shoepeg) 1 can Petit Pois Peas (also known as very young or early) 1 can diced carrots 1 jar pimento Add: 1 chopped onioon 1 chopped green bell pepper 1 stalk celery, chopped Boil the following: 1/2 c white vinegar 3/4 cup sugar 1/2 c canola oil 1/2 tsp dried dill weed Pour over drained vegetables. Chill for one to two days and serve. I double it for larger groups. The longer it sits the better it tastes, but I've served it after making it a couple of hours earlier.

The English Pea Salad looks fabulous. I have a great pea salad I haven't made in years This is mine..> Cold Pea Salad from Simply Recipes. It is delish INGREDIENTS 16-ounces frozen petite peas (do not thaw) 6 ounces smokehouse almonds, rinsed to take off the excess salt, chopped (preferably by hand) 1/2 cup chopped green onions 8 ounces chopped water chestnuts 2/3 cup mayonnaise 2 tsp yellow curry powder Salt and freshly ground pepper to taste METHOD 1 Combine the frozen peas, green onions, almonds, and water chestnuts. Mix together the mayonnaise and curry powder in a separate bowl. 2 Gently fold the mayonnaise mixture into peas. Add salt and freshly ground black pepper to taste. Serves 6. Notes from Beth: You make this salad the morning of, but add the almonds when you serve it. The salad is still good the next day but it's best if it's made the day you serve. librarylady I made the salad you suggested. RAVE reviews... everyone asked for the recipe I will be making it again. I made two minor changes... I used prosciutto instead of bacon, because its what I had, and I used smoked sea salt instead of regular, and finally I added a squirt of honey to the dressing. (Honey is an emulsifier so when you blend the dressing it keeps it from separating. I didn't use much but it added a slightly sweet flavor to the dressing.

I don't have a green salad recipe but I do have a potato salad recipe if you would like it.
baked potato salad
boil or bake potatoes sour cream chopped green onions shredded cheddar cheese bacon crisp cut up into bits salt and pepper to taste
I usually don't measure any thing out. I just add enough sour cream to make everything stick together. We also like to leave the peels on our potatoes.
The think I love to put into my green salad is mandarin oranges, olives, zuccini and I like to use the spring mix. and shredded colby jack cheese

I made a really yummy one for a party the other day:
1 container of cleaned baby spinach 2 heads of romaine lettuce chopped 1 small container (about 3/4 cup) of crumbled feta cheese 1 pint of fresh plump blueberries 1/2 container sliced strawberries
I tossed the lettuce and spinach in a glass bowl and then distributed the blueberries and strawberries on top. I sprinkled the feta on top of the berries.
I brought a combination of strawberry dressing and poppyseed mixed together. It was so good! On my plate I had some cantaloupe that was mixed in and that was better!!
I making a Cobb Style salad for a party tomorrow: Large serving platter (like what you would serve a turkey on) 6 heads of romaine lettuces chopped 1 quart of fresh sweet strawberries sliced 3-4 cups of cooked chicken, diced (rotisserie works good) 2 cups of mandarin orange sections, drained well 1-1/2 cups of Craisins 2 cups of chow mein noodles 1-2 cups of diced/sliced seedless cucumbers Shredded cheese or feta cheese (You can add diced red/yellow/orange sweet peppers, diced celery, sliced sweet or red onions)
I lay a bed of lettuces over the entire platter then I lay all the ingredients in rows on top. I plastic wrap it then serve it with a ginger-orange dressing. So yum!
