I'm making a pumpkin dessert from our best bites. The instructions say to use a can of pumpkin (larger for more pumpkin flavor and texture and small can for less pumpkin) and follow the instructions to make pie filling. The can of pumpkin says to use evaporated milk but the recipe later says sweetened condensed. Which do you use? I would like to use a big can of pumpkin but only have one can of each type of milk. Do you think that would work? Or should I use a smaller can and only one type of milk? If so, when one?

if you sub one can of sweet condensed for the evap - i'd cut the sugar down..by at least half. I doubt you'd really screw it up by making the switch.
i use the large can of pumpkin
two evap milks
1 1/2 cup sugar
2T flour
4 eggs
and spices including a teaspoon of salt
this makes enough for two 9 in deep pies
i would not venture out to get another evap milk

i'd use both milks and only a 1/2 sugar

my recipe is 3.5 cups regular milk, 5 eggs and 2.5 cups brown sugar...never evaporated milk or sweetened condensed...but then i don't use pumpkin from a can....

but not so much that's it's going to screw up a pumpkin pie...in my opinion/experience

Dh makes the pumpkin pies and he uses evaporated milk and doesn't use pumpkin from a can.

I use the libbys pumpkin and sweetened condensed milk. Everything else the same. So good!

Thanks! I ended up just using the small can of pumpkin and a can of sweetened condensed milk.
This isn't a pie but used the pie filling recipe. There was no sugar in the recipe.

My grand-prize winning pie 4H champion mother says only evaporated. No sweetened condensed.
I had cooked taste in a ramekin today, and it was amazing.

I did that this year. Ooops! It tasted fine, possibly a little spicier and denser than usual - but definitely still edible. I was worried about it being toooooo sweet but it wasn't.

I use evaporated, and I think I've always used the Libby's recipe. I think the McCormick's recipe uses the sweetened condensed, though.
If memory serves, the Libby's recipe calls for added sugar and the McCormick's does not.

I use evaporated milk. I'm surprised that sweetened condensed comes out almost the same. My mom uses eggnog instead of milk.
