Do you always mat with white first, even a thin border? And then go on and mat with color or pattern?
Do you look at the photo colors, or the paper colors and then mat based on those?
Do you go all mad hatter and mat with patterned paper directly behind the photo?
Or is matting over rated, and some photos don't need a mat?
I know that some can print with a thin white border, which looks nice!

Interesting question! I'm curious to see how others approach this.
I like my photos to be matted, but I have no rhyme or reason as to what paper I use. I often use white, but often use patterned paper, too. I rarely use colored cardstock - no real reason other than I don't use colored cardstock when scrapbooking in general.

I do a mix - PP less than cardstock. Sometimes white (or black), sometimes coloured, and sometimes I'll do a thin white mat and then a coloured one. And now and then I'll skip the mat altogether.

I do all 3 options! It just depends on the layout.

I usually use patterned paper, but that is because I often scrap using papers that have multiple options. I will pick white every now and then. I like the crisp look of white.
ETA: Not too long ago, I had heard, read whatever... that matting was now out. I don't think that is true. I think most people still mat in various ways.

I usually mat in a color. I rarely use PP because 1) I'm most likely using PP as the background and 2) it seems like most times I try to use PP I can't see enough of the pattern to make it worthwhile cutting up PP (since I most often use PP as the background...)

I almost always mat my pictures and I almost always use white. I have to remind myself not to automatically grab white cardstock. I will occasionally use kraft or black, too, but mostly white. And trying to use patterned paper more often. Sometimes I don't mat my pictures but I realize that when I don't mat my pictures there is likely some layering going on under them so it's not exactly a mat but there's still something there to help the picture stand out.

I matte my photos with whatever matches and coordinates with the color(s) of the patterned paper, that I use as a base page for my page layout. I mix and match. Sometimes solid colors, sometimes patterned. I mix and match, stripes, polka dots, plaids, chevron, etc....

I don’t print photos with white borders so I notice I often mat with white yet there is a fair amount of coloured cs too and the occasional smattering of pp. I’m not into what’s in or out. No one looking at my albums would know anything about trends. The only time I guess that would be important is when submitting to be on a design team. I mat if I like it!

If I matte, I usually prefer white.

No rhyme or reason! I mat in white if I need a photo to stand out from the background or bring some brightness to the photo. Other than that, It's kinda random for me, but I use all 3 options!

I almost always mat my photos. Once in a while I don't mat something if it's already got some sort of layering behind it. I most often use colored cardstock to mat my photos, but sometimes I'll use white/black/kraft/ivory. Basically whatever makes the photo stand out! I try to coordinate the mat with the photo and the other colors I have on the page. Very rarely will I use patterned paper for matting - when I do it's a subtle all-over print or geometric. I think I've double-matted a few times, with white or black as the bottom layer.
As for trends, I am definitely not a trend-follwer and could not care less if something is "in" or not WRT the world of scrapbooking.

Right now I'd say about 99% of my photos have a white border or mat. I just don't love patterns or colours other than white right up against my photos. I used to do all the colours and patterns, so maybe my preference will swing back around, but for now I'm all about making my photos pop with white.

Q: Do you always mat with white first, even a thin border? And then go on and mat with color or pattern? A: My photos typically have a narrow white (or another neutral, such as vanilla, brown, grey, or black) textured cardstock mat; sometimes I double or triple mat photos with (an)other (often textured) cardstock
Q: Do you look at the photo colors, or the paper colors and then mat based on those? A: Yes, & usually select a neutral cardstock for the first/only mat
Q: Do you go all mad hatter and mat with patterned paper directly behind the photo? A: No; I prefer to mat photos with cardstock
Q: Or is matting over rated, and some photos don't need a mat? A: On rare occasion, I do not mat photos (but may add 2-3 layers of hidden cardstock for dimension to the unmatted photo)
Q: I know that some can print with a thin white border, which looks nice! A: I prefer borderless matte photos mounted on solid textured cardstock

I apply a 20px white stroke (border) in Photoshop to pretty much every single photo that I scrap. It's not often I will put a photo on a page without it having a border. I just finished a layout where I didn't put a border on the photos, and I couldn't bear it, so I added the border at the last minute. I went through a stage where I was putting a triple mat on photos, sort of off-centre. I really like the look of a white border, then a black and white striped mat, then a coloured or patterned mat.

I just do whatever I feel like at the moment.
I usually have multiple photos on a page, and mat the focus photo.

I generally mat with white or ivory, whichever works with my main background paper. I often do a second mat of color or pattern.

I do not always mat and when I do I often use patterned paper. It has become my style to put 3 or 4 photos together and mat them all together.
I do like to use black much more than white. I also like metallics and foil for special photos.

I do PL so a bit different, but I've been printing all my pics with a white border. I just think it helps them stand out a bit better.

I mat 99% of my photos usually with a color. I usually make the mat color the same as the title. I will occasionally do a layout without a mat. For me it depends on what looks best. Even on the layouts without mats I check to see if a color mat will look better. I seldom use white mats. Occasionally I will double or triple mat a picture. Again it depends on what looks best.

Not too long ago, I had heard, read whatever... that matting was now out. I don't think that is true. I think most people still mat in various ways. That is interesting! I don't feel like I follow trends, but I will say that I have been influenced by a certain scrapper to use a thin white border a lot more, and also patterned paper for matting a lot more. You can see the shift in my scrapbooks, which is funny to me! I do like matting with colored cardstock when the photos or the occasion warrants it, I used red, blue and silver matting in my 4th of july pics. Sometimes I like a really thin white mat with a chunkier mat or layered paper underneath

I used to LOVE to mat my photos. All of them. Specifically in coloured cardstock. Sometimes there were three or four mats. Always at least two. I still mat my photos, but not always, and now I rarely used coloured cardstock so they get matted with whatever pattern paper I am using (usually a subtle print), if I even mat. Sometimes I go wild and stick it right to a layout.
That said, I found some of my PL spreads from last year looking a little chaotic, so this year I am going to try to move towards unifying the spreads with more white...matting the photos and the cards with a thin white border. It will be interesting to see if that starts to influence my traditional layouts.
