I’m seriously considering buying a Scan n Cut. The only use would be to cut out my stamped images, preferably sentiments.
Is it really this simple??
Are there any tutorials for cutting out sentiments that you can share.

Yes, it’s that simple, as long as your stamped image has a solid outline. Artistic sketch stamps that have little gaps will get cut to pieces, unless you use a pencil or pen to eliminate the gaps.
For sentiments, I just die cut a banner or shape to fit my sentiment. Sometimes I use a stamp platform to line it up. Other times I use the “Cut first, stamp second method, but I also have a lot of Queen & Co. and other brands of banner dies that I use to cut out my stamped sentiments, rather than use my Scan-N-Cut.
I just use my machine to cut out images. I don’t use my SNC to cut out sentiments, so I don’t have any tutorial links. Sorry.

I love my scan n cut and once you start using it you'll find it useful for so much more! I don't have any links but wanted to second what scrapnana said about eliminating gaps.
I stamp my sentiment and then use a sharp pencil to draw a faint outline around in whatever shape I need, the scan n cut needs a line to follow. It also has some preset shapes and images along with fonts to play with, I'm hoping you'll love yours as much as I do!

Check out Papered Chef on YouTube. She has numerous videos on cutting stamped images, sentiments and other great tips for using the scan n cut. Her videos are a bit long but she really walks you through it step by step, great for beginners.

Assuming you want to cut out around the letter shapes, it's probably going to work a lot better on bold, dark, well stamped sentiments and not so well on anything sketchy or fine, but yes, it works well for cutting out stamped things. And you can overlay basic shapes around your stamped sentiments (like a custom sized oval or heart) too.
Having a dedicated space where you can leave it set up will make a big difference in how much you use it. For me, it does work for what I want, but I have to make an effort to get it out (first I have to clear some space) so I don't use it as often as I should.

I use mine for stamps and have no regrets. It’s that easy. I also recommend the Papered Chef videos. The pencil trick works like a charm.

yes it's that simple so long as your lines are crisp. if the lines are light or not connected, you might have to fiddle with it to get a good or continuous cut.

I find that it scans great for stamped images, but cuts a bit wonky.. am I missing a setting? I put it to outline .08 and it cuts around the image thicker at the bottom of it than the top. It's driving me a bit crazy. Any suggestions?

I brought my scan and cut in November and love. I have used it mostly for stamps and it works great!

For those getting great results cutting out stamped images, what SnC model do you have?
I want one for stamped images, but since that is the only reason, I don't want to overpay for features I don't need. But I don't want to do extra work just because I got the cheapest model.
