I know its a staple... everyone should know what to put in or how to make a meatloaf...
Tons of allrecipes with different variations... no mushrooms is pretty much all im wanting... lol

We love meatloaf. I have a couple of different things I do. Sometimes, just the basics--ketchup, mustard, egg, bread crumbs with a ketchupy glaze on top. I also do an italian meatloaf. For that one, I use a bit of leftover spaghetti sauce, italian seasoning, bread crumbs, egg and small cubes of mozzarella cheese. More spaghetti sauce on the top.
I have been watching World's Worst Cooks Celebrity edition on Food Network. Last week, they made meatloaf, and one of the "mentor" chefs added a bit of plain gelatin. I don't know what that does, but I thought it was interesting.

Well this has processed condensed soup but it's what I grew up with and we still love it on occasion. Not gourmet, but very yummy!
I just throw it together, no real measurements.
Ground beef, egg, 1/2 can of CREAM of ONION soup, garlic powder, dried parsley, pepper, bread crumbs, splash of milk if needed. Form into loaf, bake and near the end top with the rest of the soup.

My favorite at the moment is Costco's in the prepared food section. Yeah, not what you were asking. -- If I have to make it I usually do some version of Jeffrey Eisner's Instant Pot meatloaf.

We love the Skinnytaste turkey meatloaf. I've made it in a full loaf and have also made mini-meatloaves. It's delicious either way. I try other recipes (beef, turkey, whatever) and always come back to this one. It's simple to make and delicious.

i just made meatloaf last night. i've made it many ways but DH likes his meatloaf VERY basic. no mushrooms or bell pepper. just onions, garlic, salt, pepper, W sauce, eggs and bread crumbs. and of course the sweet tomato sauce on top. i do a stovetop version because he likes a bit of crust on the bottom of the meatloaf and some sauce to put on the mashed potatoes.

Cook's Illustrated for sure. So good. We double the sauce and cook in the air fryer. I will post recipe when I get home if anyone is interested.

I love extra lean ground beef, put in loaf pan, add a little ketchup on top.. all good.
salt and pepper added by person eating it. nothing added.
we don't eat beef usually anymore, so I don't make it.

I tend to throw in whatever seasonings I feel like and not follow a true recipe most of the time, but this is a great basic simple recipe my kids mastered when learning to cook. Their knife skills weren't great for finely dicing onion so it went through the mini-chopper. Extra Beefy Meatloaf

I make the one on the Lipton onion soup, dry mix, that comes 2 to a box. I use the other envelope of onion mix to make a chip dip. Both are rare *treats*. 😊

Recipe? You are supposed to have a recipe?
I usually toss in whatever I happen to have or whatever the spirit moves me to.
I do like a mix of different meats, (ground beef, Italian sausage, ground pork, ground turkey) depending on whatever I dig out of the freezer. I have even tossed in a bratwurst for a different flavor.
Chopped onions, garlic, and peppers are a must. Bacon if I have any in the fridge. Same goes for mushrooms.
Seasonings are whatever jar my hand lands on when I open the spice drawer, although I also love clipping fresh herbs out of the garden.
When it is almost done baking I spoon on a glaze consisting of ketchup or BBQ sauce with some honey and/or brown sugar and some Sriracha or other hot sauce.

Mmm. I love meatloaf.
Ours is very basic. Ground beef, bread crumbs, little salt, little pepper, and an egg. I think that is honestly it. When it's nearing being cooked, we add BBQ sauce to the top. My husband loves even BBQ sauce on the side.
Lately, we've been putting ours in at a low temp in the oven (225, I think?), and just letting it go nice and slow.
Dang. Now I want meatloaf.

My favorite is from the Mama Dip’s cookbook. It calls for milk which makes the meatloaf moist and tender.
As good as it is the first night, the meatloaf sandwiches the next day are one of my favorite meals ever. I love to take a slice of leftover meatloaf (cold from the fridge it slices clean and pretty). Put it in a hot frying pan with some butter and a touch of oil. Let each side “fry” until it’s a little crispy. Put on a good hearty bread with Dukes mayonnaise. That’ll make you slap yo mama.

This balsamic glaze meatloaf from Bobby Flay. It takes a while to chop up all the veggies, but it's worth it at the end. ETA: I don't use veal, just substitute that with more ground beef.

I know many people turn their noses up at using condensed soup as an ingredient in any dish. When I was growing up, my mom made several family favorites that used an undiluted can of "cream of whatever" soup in them. I still make them on occasion and love them to this day. It is total comfort food for me. I think using cans of soup as an ingredient was a major advertising thing in the 60s and 70s. Remember the Campbell Kids? My mom had a Campbell's recipe book too. My mom used to substitute a can of cream of chicken soup for the butter in Kraft macaroni and cheese. It was the only way I had ever had it. Of course, I went on to make it that way for my son too. He eventually went on to study to become a chef and would often come over and make these amazing dishes for us. He had the knowledge, I had the checkbook. He was still a poor student, so whenever he wanted to eat something amazing, he knew he could come to my house to cook it. He ended up moving back home after a couple of years. I came home from work one night to find him in the kitchen. I was expecting him to be whipping up some incredible dish for our dinner. What was he making? Mac and cheese with canned soup! It made me laugh. I guess no matter your skill level, you still crave the old comfort foods. I'm going to give your recipe a try! I don't think I've ever noticed a cream of onion soup before.

I also put it on a rack so the fat can drip through. • Horseradish Meatloaf • 2 pounds ground beef (I use Costco’s lean 12% fat?) • 2 eggs, lightly beaten • 1/2 C. dry bread crumbs • 1/2 C. ketchup • 1 T. horseradish • 2 t. Worcestershire sauce • 2 t. salt • 1 t. onion powder • 1/2 t. black pepper • 1/2 t. mustard powder • 1 clove garlic, minced • 1-2 T. chopped fresh parsley • Sauce: • 1/2 C. ketchup • 3 T. brown sugar • 1 T. horseradish • 2 t. spicy brown mustard • 1/2 t. mustard powder • 1. Preheat oven to 375 degrees. • 2. In a large bowl, mix all meatloaf ingredients together well (Although messy, it’s easiest to do this with your hands). Press meat mixture into a 9 x 5 inch loaf pan or form into a freestanding loaf in the center of a baking sheet. (I put it on a rack on a small jelly roll pan then I make a freeform loaf about 9 x 5 or so with a flat top.) • 3. In a separate bowl, whisk together the sauce ingredients. Spoon half of the sauce mixture on top of the meatloaf. Place meatloaf in a preheated 375 degree oven and bake for 50 minutes. • 4. After 50 minutes, remove meatloaf from oven, spoon remaining sauce over the top and return to the oven for 10 minutes. Remove from oven and let cool for an additional 10 minutes before slicing.

I can't stand meatloaf, but it is a family favorite. I make these mini ones to make it easier to serve and often double the recipe and freeze them raw so it is easy to pull out and cook later. These are my families favorites - they won't order meatloaf any where else because they don't think it will measure up. www.allrecipes.com/recipe/15715/mini-meatloaves/
