The only one I make comes from a Disney kids cookbook and uses oatmeal instead of bread crumbs. I make the sauce with BBQ sauce, brown sugar and Dijon mustard.

No measurements, but always these ingredients from my mom:
Ground beef Eggs Oatmeal Onions, carrots, and celery minced in the food processor Parsley or other herbs Pepper
I always mix the last ingredients well before adding the meat to avoid over handling the meat. Also I never make a glaze. My husband likes it with beef gravy. 🤷♀️

Meatloaf should not be a thing! 😤 Why? LOL, I didn't think anyone would really notice if I slipped that in there. My mother LOVES meatloaf! She managed to birth 5 kids, meatloaf haters each of us. We have loads of crappy meatloaf stories, and none of our kids have had meatloaf.

But hey at least it wasnt a pile of ground meat... like last time.... Thanks everybody... I use a Paula Deen meatloaf recipe which calls for 2 pieces of bread in the bottom of loaf pan. Not for eating, but to soak up the grease.

Traditional with a dab of milk and Worcestershire added. I press into 6x9, flattened out and cover in ketchup. Bakes a little faster.
I LOVE crispy edges!

I love extra lean ground beef, put in loaf pan, add a little ketchup on top.. all good. salt and pepper added by person eating it. nothing added. we don't eat beef usually anymore, so I don't make it. Ma'am that's a giant hamburger, and not one I would eat. Lol!

I shape mine into a loaf-ish shape and bake it in the middle of a 9x13 pan. The fat spreads around the edges, and the meat loaf doesn’t come out all soaked in fat.

I don’t use a recipe, I just wing it but to change it up, I put put Mac & cheese in the middle of it. You could do a layering of meatloaf/Mac & cheese/meatloaf , etc. but I prefer to surround the Mac & cheese with the meatloaf mixture. Cooking time may vary since it is rather large so I make sure to use a thermometer to make sure the center is heated sufficiently. Typically I use premade Mac & cheese like Bob Evans from the refrigerated section of the grocery.

My new favorite is Skinnytaste’s Giant Meatball. It’s made with ground Turkey but I usually use ground chicken. It is just a good meatloaf with spaghetti sauce and mozzarella placed on top at the end. Yummy!

I use my dads recipe. I use 2-3lbs of ground beef (large family and like leftovers), 2 eggs, some crushed saltine crackers, salt and pepper. Then the topping is a mix of brown sugar and ketchup. Roughly equal parts.

My mom didn't make it, it was my dad's thing. He lost his job at Caterpillar in the 80s and meatloaf was cheap and he had fun while he was out of work with a variety of "Daddy's Mystery Meatloafs" which was more like Daddy's Misery Meatloaf. Shudder! He grew up on casseroles and things like creamed tuna on toast and the usual Sunday roast, etc. My mom did not, and she's a really good cook.

There are already a bunch of yummy recipes here, but I'll toss mine in too! ;-) I used to bake them, but it always seemed a little dry. Now, I cook meatloaf in the pressure cooker. I started with my stove top pressure cooker years ago. Now, I use an Instant Pot. :-) There is a trick to making meatloaf in a pressure cooker so you don't end up with a grey blob. LOL! (I'll include it below).
Recipe 2 lbs ground beef 2 sleeves crushed saltine crackers 1/2 small onion chopped (or more to taste) 3 eggs 1-1/2 tsp of Lawry's Seasoned Salt (or more to taste) 1-1/2 tsp of Italian Seasoning 1/4 cup (ish) of Ketchup
Vegetable Oil - for browning BEFORE you put it into the instant pot! (THAT'S the secret! ;-) More Ketchup for the tops before cooking in the IP 2-4 tsp of beef base to make the broth for cooking in the IP
Directions: Mix everything together and divide into four parts. Form each part into a square "loaf". Brown in the oil in a hot skillet, turning each loaf to make sure all sides are browed evenly. Add beef base and water to the IP Add cooking trivet to the IP so that it is above the liquid below Place all four loaves in the IP and add ketchup to the tops.
Cook on High Pressure for 25 minutes and Quick Release.
I add some corn starch slurry to the broth left in the IP to make a delicious gravy.
We serve this with mashed potatoes and corn. Mmmmmmmm!
Note: I use the same recipe for meatballs except nix the ketchup and toss in garlic salt instead (or garlic powder). I form the meatballs and then cook them up in the air fryer for about 8-9 minutes. Perfect and NO standing over a skillet to turn them!

I always use half mince (ground beef) and half sausage meat, then it slices really well. I also soak the breadcrumbs in milk before mixing them in - I read that it stops the breadcrumbs drawing moisture out of the meat, and I think it does work.

I've never been a fan of meatloaf, but DH makes it once in awhile so I've learned to tolerate it. There was a recipe in a MOPS (Moms of Preschoolers) recipe book that wasn't half bad because it called for grated carrots & a good Ketchup/brown sugar sauce on top.
DH made a bacon-wrapped smoked meatloaf (with diced bell peppers & some BBQ seasonings) recently that was really good--I told him he's only allowed to do that recipe/method in the future if he wants to make meatloaf.

I don’t really have a recipe. I use a couple pounds of ground beef or a mix of beef and pork, 2-3 eggs, seasoned salt, pepper, tomato paste and whatever other spices i like. My kids favorite part is I mix equal parts red pepper jelly and ketchup for a sauce to top it. It makes a really good glaze.

I tore this recipe out of a magazine over 20 years ago and I’ve been making it ever since.
2lbs 85/15 ground beef 2 eggs 1 onion, grated 1/2 bunch green onions, chopped 1/4 cup milk 1/4 ketchup 1 cup Italian breadcrumbs 1 1/2 teaspoon kosher salt 1/2 teaspoon pepper
Additional 1/2 cup ketchup
Mix ingredients together gently. Form into a loaf shape in a baking dish. Drizzle 1/2 cup ketchup on top. Bake at 400 about 1 hour or until internal temp is 160.
