I hate planning and hosting parties. Love the event when we get to it, but the stress of planning is rough.
If MIL is into things like that and you get along, i'd consider cohosting it with her. Might take some of the stress off of you.

I did not read all the replies BUT my DD got married this past April. She and her DHs family live 6 hours from me. She tried to involve me as much as she could but it was hard. Her MIL wanted to throw the shower. I offered to help but it was really not feasible from 6 hours away. MIL threw her a beautiful shower. It showed how much she loves DD and I thanked her. I feel lucky that DD is welcomed into such a loving family.

Keep it simple. Keep it short.
A 'come & go' is my favorite type of bridal shower. That way I, as the guest, do not have to stay for hours. I HATE games with a passion, and almost everyone I talk to hates doing them at showers also.
You mentioned charcuterie and champagne and that sounds great.
Set the time for a couple hours and say it is 'come and go' - people can stay or leave.
You don't have to go crazy with decorations.
