When cooked properly, that’s my favorite part! Amen! I need the fat so yeah I like it crispy but fatty. It's so good! LOL @chaosisapony - try cooking it differently. I only bake my bacon in the oven now and it is transformative! I line a very large rimmed backing sheet with parchment paper. I put the entire package of bacon on it at once (it is a big 15x10 sheet pan). I use the large/wide parchment paper so it contains the bacon fat. I bake at 350º until it is crispy - but watch it so it doesn't get over done. At about 10 minutes, I go in and move each piece around so it doesn't stick/cook together. By slowly baking it, it renders a lot of the fat out, leaving what is behind so light and crispy. I remove it from the pan and lay it out on paper towels to remove as much of the liquid fat as I can. I wrap it in a clean paper towel and put it in a large zip bag for sandwiches and burgers during the week. SO good> My favorite is Farmland Thick Cut Hickory.

Sorry, I assumed baking it was a given. Absolutely the best way to cook bacon.
If I can't get pastured bacon from the local farm we like, We like the Applegate Farms uncured thick-cut bacon, baked in the oven until it's nice and crisp.

I think the precooked bacon from Costco is the best. I like it super crispy. Limp, fatty bacon is just gross.

Broiling it in the oven on a (2-part) broiler pan. It's fast, crispy, & the pan keeps it from sitting in its own grease. You have to watch it carefully, but it's the best way I've found for crispy. It was recommended when I needed a bland diet.
If you don't want to deal with cleaning the pans, a good precooked is an excellent option.

You need to buy center cut bacon. It has very little fat compared to regular. Is really bacon (vs Turkey or Canadian bacon).

I am sure that we had a similar thread about bacon recently. I'm not saying that as a dig at you for posting this, because I am all for talking about bacon every week haha!! I remember that someone else mentioned that they didn't like the fatty bacon and were looking for a different cut/brand. Which at the time I thought was weird/funny, because growing up in Australia we only had boring bacon with hardly any fat on it. Then when American-style streaky bacon with LOTS of juicy fat started appearing in our supermarkets, I was so excited!! If I am using bacon for a recipe and I don't want the lovely crispy fat, I will always buy shortcut bacon. It's just the roundish bit and has barely any fat. And what little fat there is, is easy to pull off. ETA: This is the thread I was talking about. It was actually about favourite brunch recipes, and went off onto a bit of a bacon tangent. I posted a picture of shortcut bacon on the thread. That’s what we call Canadian bacon! It’s what you find on an Egg McMuffin. OP - I check the back window on bacon packages to get the most lean one I can. The other thing that helps is to bake the bacon in the oven. Yes, I started cooking bacon in the oven years ago and I won't ever go back!

I haven’t eaten bacon in a long time, but I never liked turkey bacon. I do really like the Morningstar “bacon” though. I use it for sandwiches a lot. I know it is not what you are looking for, but it might be worth a shot. It gets very crispy! Actually that's a great idea, I never thought about exploring meat alternatives for bacon. I'm glad you mentioned it!

I haven't seen anyone else say it on this thread, and I am almost scared to admit it, but my name is CraftedbyS and I like my bacon chewy.
Whew! I know there are so many who are shaking their heads and saying ew, but I have always liked my bacon chewy.
I think partly because of how many times I have had bacon cooked past crispy to the point that it turns into dust when you bite it. Not good eats.
When DH bakes a tray of bacon he always takes some out a bit sooner for me. Of course I have to watch because DS and DH will just grab bacon and I have to claim mine before they get that too.

I just solve the problem by buying the precooked Costco bacon and then microwaving the hell out of it until it’s really crispy. It’s perfect every time doing it that way. I hate limp, soggy, fatty bacon regardless of how thickly cut it is. That was my suggestion. I do one minute for 2 slices. It is much better than the Hormel or other precooked brands, by the way.

I am not sure about broiling, but I bake my bacon in the oven at 350 and do not get grease all over. Not to say there isn’t some grease but nothing more than normal oven usage. I use a Baking pan that has the rack in it. It sits low enough that there is not a ton of splatter and the bacon doesn’t sit in the grease. It is the Rachael Ray bacon pan that someone mentioned on one of these threads a long time ago and I bought. I love that thing…and clean up is so easy. I have gifted them to a few friends because they love mine. I think the higher the oven temperature the more the splatter…but that could be totally my imagination. Hahaha. However, I do not use the self cleaning part of my oven because it makes me nervous.

This thread reminds me of the recent RHOBH. Sutton claims she's a vegetarian except for the bacon part. Cause she eats bacon. She's a ditz I swear but I love her. Next weeks previews apparently the new housewife goes off on her over it. Over Sutton's love for bacon. And I watch this show religiously. LOL

I just do it the old fashioned way in a skillet with a splatter screen, or even better, outside on a griddle. Cooking it outside makes the neighbors jealous LOL.

oh and this time of year I hate to heat up the oven so if we want bacon we use the cast iron skillet on top of the stove. They need seasoning anyway.
And I like the Kirkland brand of bacon, center cut I think it is. Most meaty but still lots of nice bacon fat that renders into the perfect refried bean grease.

The type of bacon maybe? super fatty vs meatier center cut? That’s possible. We never buy normal uncooked bacon and this friend brought a pack like from a butcher store wrapped in the white paper. These days we only buy the precooked Costco bacon because 1) we’re lazy like that, 2) I hate getting stuck cleaning up a greasy mess and 3) it’s nice being able to pull out only 4 pieces or whatever we’re actually going to eat. But anyway, I’m sure his bacon was fattier than what we’re used to because the precooked kind has half of the fat cooked off of it already when you take it out of the package. He cooked it on a gridded rack placed inside a sheet pan, and that rack was also a PITA to wash with all the greasy bits cooked onto it. The oven window was all spattered with cooked on grease as was the inside walls of the oven. I had to wait for the oven to cool down to clean it and I was so not excited about that.

I didn’t read the whole thread, so hopefully I’m not just repeating what others have said. I know everyone loves bacon cooked in the oven, but I cook mine in the microwave and I LOVE it that way. It comes out really dry and crisp, almost like thick bacon potato chips. It doesn’t spatter because it’s wrapped in paper towels. The fat soaks into the paper towels, doesn’t stick to the bacon. It’s easy to put back in for another minute if I don’t think it’s done enough. CRISP and DRY. If there happens to be an exceptionally fatty section I don’t want to eat, it’s easy to break off after cooking. But even the fatty parts are CRISP and DRY. I have a ridged, hard plastic microwave bacon thing I got a million years ago from Tupperware that I cook it in, but before I had that, I would just use a couple of the Chinet plates stacked together. A china or glass plate would work, too, or a baking dish. The only downside is it does use paper towels. I guess if you wanted, you could use cloth towels and wash them in hot water afterwards.

I have never had bacon spatter while baking it in the oven. I bake it at 425 on a cookie sheet lined with parchment. Takes about 20 minutes for thick cut bacon. I can’t imagine how it would spatter because it doesn’t even sizzle like it would in a hot pan.
